Product Description

Product Description

Tagines are the rich and aromatic casseroles that form the basis of traditional Moroccan cooking. These hearty one-pot meals, flavoured with fragrant spices, are cooked and served from an elegant, specially designed cooking vessel, also called a tagine. In Ghillie Basan's collection of deliciously authentic recipes you will find some of the best-loved classics of the Moroccan kitchen, such as the sumptuous Lamb Tagine with Dates, Almonds and Pistachios, and the tangy Chicken Tagine with Preserved Lemon, Green Olives and Thyme. Also included in this collection are less traditional but equally delicious recipes for beef and fish - try Beef Tagine with Sweet Potatoes, Peas and Ginger or a tagine of Monkfish, Potatoes, Tomatoes and Black Olives. Hearty vegetable tagines include Baby Aubergine with Coriander and Mint, and Butternut Squash, Shallots, Sultanas and Almonds. Recipes for variations on couscous, the classic accompaniment to tagines, are also given plus plenty of ideas for fresh-tasting salads and vegetable side dishes to serve as part of your Moroccan-style feast. This title includes superb location photography plus fascinating essays on culinary traditions.

Tagines & Couscous 14 Nov 2010
By Polly
Format:Hardcover
I love this book and I am working my way through all of it. So far every recipe has been full of wonderful flavours and you don't need a tagine pot just a good sized casserole/saucepan to use on the hob. I recommend it.

I first cooked a tagine recipe out of a magazine and the results were so amazing that I wanted to cook more Moroccan food and do it properly. I bought a Tagine and the smaller version of this cookbook, which I really like.

My sudden discovery and cooking of Moroccan food has now got my family hooked, so for my sisters birthday I have bought the book again.....however this one is bigger and brighter than my version ( and nicer ).

I love the basic recipes for preserved lemons and spice mixes and each recipe I have made has turned out to be something special. If you want to try something new then get this book - you will impress yourself and your guests with mouthwatering recipes and the most tender meat ever.

I purchased this book as it is one of the few cusines I do not have experience of cooking with. The book gives a wide variety of recipes for meat, fish and vegetarian meals, as well as sides and desserts. I now feel much more confident cooking in this style. You don't even need a tagine, the vast majority of recipes work just as well in a casserole dish, which is great as my oven isn't big enough for a tagine! The recipes are very easy to follow, and none of them take more than a couple of paragraphs, making it a great book for any cook even the beginner to russle up something to impress.

The one let down of the book is that the photos are quite dated in style and very dark, but with clear instructions, inexpensive ingredients and consistently good results I feel this is a small price to pay.

Useful and colourful.I like this book that gives me that exotic kick and makes me dread of oriental feasts. Not only a gastronomic ,but also a cultural read.A little too expensive.
