I write this review with the utmost of sincerity. Download this book. 6 months ago, I undertook the (to me) Herculean task of learning how to cook - somehow that skill has escaped me. I've been buying a lot of recipe books in the last 6 months, and with few exceptions, this one has been the best by far. The recipes are easy (bonus!!) and so tasty. I've made 8 of the recipes so far (roasted asparagus with feta? Swedish kale chips? Swedish spaghetti squash? YES PLEASE!) Even the Swedish Pickled Beets and the Swedish Cucumber Salad recipes tasted exactly like my saintly Swedish grandma used to make. Now I know her secret, she must have had this recipe book! I'm not a vegetarian, I just like vegetables and am always looking for tasty ways to cook them. Score! But don't think this recipe book is all about vegetables. Nope. Swedish pancakes, Lingonberry bars, Swedish Oatmeal Drops. So good!

I got this book for free and it serves my purpose of recipes in one place for root vegetables that I have begun to grow in my own garden that I am not familiar with and I needed recipes on preparing and enjoying them. HOWEVER, this is the third free ethnic cook book I have gotten in the past ten days, and altho the name of the supposed author has changed each time to possibly reflect the ethnicity of the "author", I STRONGLY suspect it is the same person or group of people creating these cookbooks from recipes off of the web! The language used in the preparation is the same in each, and the end of each book has the same type of "English is not my native language" sentence structure about leaving a "prestigious" review please.

The recipes in and of themselves look great, there is a TOC and photos of each dish. BUT MY PROBLEM with this is that it is a compilation of free recipes that can be found on the web, not something the "author" came up with or even wrote about....just edited. This is misleading and possibly illegal if the recipe sources were copyrighted. Whoever this is putting these cookbooks together should not be doing it this way..... I WOULD STRONGLY SUGGEST THAT YOU DO NOT PAY MONEY FOR THESE COOKBOOKS for this reason.

Known to be in the forefront of healthy diets, these recipes are not only easy to prepare, but each recipe gives a list of ingredients to prepare ahead of time, well written directions on how to prepare the dishes, and each dish is accompanied with a color photograph of just how the finished product will look. The taste test is up to you!

Some of the recipes included are Swedish Pickled Beets, Swedish Cucumber Salad, Swedish Strawberry Compote, Swedish Almond Cake Slices, Mashed Rutabaga and Potato, Swedish Tomato Salad, Chipotle Pepper Puree, Potato Griddle Cakes, Swedish Dried Fruit Cream, Swedish Potato Salad, Sweet & Sour Spiced Red Cabbage, Swedish Spaghetti Squash, Baked Stuffed Pasta Shells, Swedish Lentil and Barley Soup and many more. You'd never tell by the titles that these are health oriented foods, but they definitely are.

Measurements of the ingredients are precise. Directions for each of the recipe is very easy to follow. From me, I highly recommend this delicious cookbook.

the recipes are very good and easy to follow. not much of a vegetarian, but i like to mix it up once in a while.

Everyone needs to try a vegetarian diet at least once in their life for a period of time. We shouldn't always be going toward fast food and junk food.
