Fed up with making nigiri by hand? Make oshizushi (pressed sushi) instead in about 1/10th the time. In fact, I think the neat square pieces look very interesting on the plate, perhaps nicer than nigiri. You can also use a much wider variety of ingredients too, because they are all pressed together, rather than balanced on top.

It's a very nice mould, and works brilliantly, even first time. The basic idea is this: fill the mould with rice and toppings, put the lid on, press down, take the lid off, slice down through the slits, and voila (or whatever the Japanese word might be): neatly made slices of pressed sushi.

You can put a piece of cling film into the mould before you start, and fold it over the ingredients before you press, and then the mould doesn't get any rice or other ingredients on.

The only criticism would be the lack of instructions, but it's really not difficult and there are instructional videos to be found on YouTube.

The mould is quite pleasing to the eye, and looks quite well made, so I suspect it will last a very long time.
