As a sushi lover, I really enjoyed this book. Although I consider myself an expert, I learned a lot of things I didn't know: this is the most informative sushi book on the market. Where other books are limited to how to make your basic sushi, this one will show you how to choose the rice, cut the fish, make pickled ginger, what knives to use, what to drink with sushi, how to spot the right sushi bar, and of course not only the basic recipes but a lot of new recipes I haven't found in any other sushi book. Not only does this book teach you everything you want to know about sushi, it will also take you on a tour of Japan and the mystical culture surrounding sushi. A must for any sushi lover.
