Recipes are the same as conventional recipes with a bit of soya milk or tofu thrown in. I don't expect a tofu cheesecake recipe (appearing in a healthy recipes, soy book) to contain 8oz of cream cheese. Nor a recipe for pannacotta containing a substantial quantity of mascarpone. Overall a very disappointing book. I have returned my copy.
