Product Description

The Stellar Sabatier combination of Carbon-Chrome-Molybdenum and Vanadium Steel offers the advantages of easy sharpening with extended edge life and resistance to rust and stains. Each blade is fully forged from a single billet of top grade steel - not strip steel. Blades have a full length 'tang' which extends into the handle. The craftsman-ground edges will retain their sharpness through expert hardening and tempering. The perfect taper grinding of Stellar Sabatier blades produce a fine and very strong cutting edge unlike hollow ground blades which eventually become impossible to sharpen. Each Stellar Sabatier knife has a perfect join between the handle, bolster and blade - the hygiene requirement of top quality professional knives.

Very hard steel and thin blade so need to be treated with care, but if used properly they are very good. Feels nice in your hand, well balanced. Razor sharp edge out of the box and easy to maintain with a steel and wetstone. I like it as much as my global knives despite being a lot cheaper, remains to be seen if it lasts. Other people have mentioned that these knives go rusty easily, this may be the case but I never intend to find out- all my knives get washed and dried at the end of every service at the very least, so not an issue. At this price this is an excellent knife, much better than other sabatier branded stuff I've tried, in particular the "V Sabatier" type which are utter rubbish.

Probably the best of the sabatiers to buy for someone looking for a good general purpose knife. Superior to the global knives for people with big hands. Very good value and if looked after with a wet stone, a knife for life.

I bought this to replace a similar sabatier knife that some unruly teenagers decided to practise the 'knife-throwing at concrete game' with.... It is extremely sharp and has a lovely weight to it - and was very reasonably priced. It doesn't sit in the hand quite as nicely as my old knife - and that would be the only criticism. I'm sure others wouldn't notice - as they wouldn't have the comparison to make.

I received this knife as a gift and have had it for 8 months. I have very much enjoyed using it, it fits well it the hand and cuts through almost anything like butter. After 8 months it developed a hairline crack along the back edge. These knives come with a lifetime guarantee, something the Amazon description does not mention. I contacted Stellar about the defect and they responded the next day to say a new knife was in the post for me. Absolutely brilliant!

As this is a Sabatier knife, I knew it would be good. The size is useful - bigger than a vegetable knife but smaller than a carver. I find I am using it a lot and I am confident that it will last. Cheap knives are not a good buy as they don't sharpen well.

Also cuts through the soft skins of tomatoes/grapes etc with ease.
This was a present for someone and so far the only food it got a bit stuck in was a thick parsnip. however this was an old parsnip and it has worked well with new season ones.
Washes well in a dishwasher.
Good size and easy to handle.

I have several Stellar Sabatier knives, but this size went missing, so I bought this as a replacement. It is an ideal size for a variety of vegetables. I would like to clear up some nonsense I have seen in several reviews for other Stellar Sabatier knives. First of all some say they rust and are not stainless, this is nonsense, You would have to submerge this for a very long time in the sea to even try to make it rust. I use my knives every day, and they go into my dishwasher every day, and they all look as good as new. Sabatier is not a brand, but a group of companies that produce quality knives in Theirs, France. the Stellar knives are made by Rousselon Freres. I would use no other knife. There are some companies that use the Sabatier label when they should not. Please read more on wikipedia, searching Sabatier. I would agree with all the good points shown in the other five star reviews.
