I just bought this book so I haven't actually yet made a recipe. But, it is a great read! There is so much information about all the aspects of the countries and the cuisines. The authors break it down by Spain, the Middle East & Africa. They go into detail about the various products including cheeses, oils, meats, spices, vegetables, fruits, etc. They also go into detail about the kinds of cooking utensils used. They write about the different regions of countries and feast days. If you are planning on travelling to any of these places, this would be an excellent guide about the types of food you would encounter. Spain is covered in more detail because, obviously, that is one country. The Middle East & Africa are a bit more broad and there is a variety of recipes from different countries in Africa & the Middle East.
The pictures of techniques and the finished product are very helpful. The recipes don't seem overly complicated but some ingredients might be difficult to find if you don't live in a larger city (like "egusi"-ground melon seed). Some ingredients could be found in natural foods stores or section of the grocery, such as bulgur wheat and chickpea flour. (Bob's Red Mill products would be good.) However, most of the ingredients are very basic, especially tagine recipes, using easy to find vegetables. If you are a vegetarian or want to eat more veggies, this book seems very good for that, too.
My only minor quibble is that the print is small. But, the book is packed with recipes so I guess they needed smaller font!
I am looking forward to using this book. I live in a smaller city with only pizza, hot dog, and Mexican restaurants so I am looking forward to creating some flavors that I can't get otherwise.

I had to order this cookbook after seeing it and using in a 16th century farmhouse we rented in Northern Spain. Great info on Paella and other traditional Spanish dishes, but the added bonus of the Morrocan and African dishes pep up one's cooking routine.
