As all of his books, Jason has presented the art/science of Sous Vide cooking in a clear and easy to understand way. Grilling is a natural finishing method for meats and vegetables that have been cooked in your water bath. There is very useful information to insure great results, even on your first try. Guaranteed, repeatable results are the strong points of this method of cooking. Even inexpensive cuts of meat can be magically transformed into tender, mouthwatering center of the plate masterpieces. You need to know the safe food handling rules and these are well documented in this book. If you are already "Sous Videing" or are just considering this new and emerging cook method, this is a great addition to your cookbook shelf.

I was already reasonably experienced when I picked this up so was familiar with the techniques already. This gave some great ideas about easy to make sauces and recipe ideas to go with your sous vide meats and veg. To criticise this by saying all it does is say 'cook sous vide then grill' is to miss the point. One wouldn't complain that a normal recipe book said 'fry in pan, boil or roast' surely?

For the beginner this offers a simple and concise guide to getting started with times and temperatures that I found easier to read than Baldwin, though that offered a little more of the science behind it. This is therefore probably a more rounded cook book overall and I thought the recipes were much more pleasant than Baldwin's otherwise excellent guide (which often was a case of 'and then top with sauce').
