Such a clever idea this: on one page a straightforward recipe to get you started and comfortable with the techniques needed, and then on the next page, the same recipe but used as a foundation to build a more elegant, and at times, exquisite take on the same dish.

Have long been a fan of Jun Tanaka's cooking and having visited his restaurant I could not wait to get my hands on his first book...I was not disappointed.
As said in earlier reviews he takes simple recipes and then adds a variation of the same dish to take it to another level.
Have tried them out at a couple of dinner parties and people have been blown away. The Butternut Squash soup was divine and the Elegant Fish Pie was fantastic!
All in all a fantastic book that is well presented with recipes that are explained in a way that makes it seem easy. Top Notch!

If you want to experience recipes and cooking at the upper end of cuisine without having to be a professional chef - this is a great place to start.

Smoking duck with tea leaves (impossible? No just use the right pan! great) cooking fish in balmy oil - 70 degrees??? - wow - after anxious moments and uncertainty the ultimate result, fish with perfect texture and genuine flavour.

Try something different and trust these recipes!
