I use this for making caramel and toffee. You have to clip it onto the side of the pan and the probe needs to sit in the stuff bubbling away, so if you used a very deep pan for making even small quantities, you may struggle to get this to work for you. It gets very hot and the little silicon bits on the side aren't really sufficient to protect your fingers but as you don't really need to take it off much whilst it's still hot this isn't a major problem. I think the design could probably do with refinement but it's a good jam/sugar thermometer.

Although this does the job it is meant for it is not well marked out with the degree classes such as small ball, large crack, etc, which is so important for sweet making. It also needs to be washed very carefully to avoid water getting inside.

I bought this primarily for candy making. I thought it just needed to have the tip of the probe in the liquid to work but does need to be quite deep. I don't mind having to tip my pans to get a good reading as this is a sturdy therm with a nice big dial. The clip that attaches it to the pan doesn't work as well on my pans with a flared lip but the actual dial is easy to adjust up and down.
