I was looking for a small japanese knife after investing in a $$$ suishi knife a numbers of yrs ago. My thought being that a good knife which is made from japanese steel will last you a life time. Anyway Id stumbled across this one on Amazon .. and brought it after all the reviews. I can say that I was not disappointed at all as the knife is of excellent quality. Being made from VG10 steel..it is sharp from the factory and is now really sharp (shaving sharp) after I'd put it through a Tormek ! Though of you who dont know what a Tormek is .. just look it up in YouTube.
Anyway..I have today also ordered the longer blade knife and am looking forward to it arriving too. Delivery from Japan is fast so just order your today !

Good knife and Damascus quality basically means this will last a life time if looked after but I'm confident with this and its razor sharp professional quality and really good crafted all round round chefs knife in my opinion better than global and I've used glovals for over 10 years and replace them on average of 3years

Good communications from the seller and the knife came directly from Japan. :) I was pleased as punch to find that the metal was of excellent quality. I am still using the factory sharpness even after weeks. Some flaws are: the spine is not smoothed out, the thickness of the nakiri usuba (vegetable) knife is way too thick. I am certain that this would have been a better knife if it was thinner. It would not be less strong if it were thinner, so I don't know why they did not make it much thinner.The dimples are not enough to prevent sticking. It still deserves 5+ stars because if I could I would give it a 6 or 7. Why? because it is just excellent in so many ways. The small 7cm knife is superb. The other mini santoku is my wife's favourite for meat because it is light and cuts like a hot knife through butter.

*** Additional observations and thoughts after 6 MONTHS OF USE ***

1)Honing tips: I have only had to do the gentlest of leather strops to get it back to the factory sharpness (if not more). Even extra fine stones and diamond whetstones are way too coarse and NOT advisable as this knife is capable of a very fine edge. -> This ultra fine sharpness stays good for 2 months of everyday use!

2)It has become a frequently used knife. So far it has been 100% stainless. We are a family of five and our kitchen is a busy place. So not having to worry about the knife being wet is good.

3)Storage tips: Do not throw it naked in a cutlery drawer or knife block if you can help it. If you can find a wooden tray or box to store it safely then that is best as this is a sharp knife with a very long taper. So the knife gets very thin halfway from the top, or the spine as it's called. We still use the paper box it came in which is inside a drawer. So in my opinion it is a good idea not to throw away the little cardboard gift-box it comes in!

4)After 6 months of use I still think it deserves more than 5 stars! Thanks for reading.

A beautiful knife at one of the best prices going. Its shape seems to be between the classic santuko style and the western chefs knife which suits me. Sharp! Tried the paper slicing, cutting tomato (without holding the tomato!) and other tests found on the internet! I thought its balance was a somewhat foreword until I realised that it its design is for the "three fingers around the handle and pinch the side of the blade with finger and thumb" style grip; then the balance point is right at the pinch point. This grip seemed to be favoured by a number of chefs on internet videos and gives a very secure and safe grip. Not sure how its sharpened but it seems to be a Japanese 30/70 edge. I think I have couple of months before I need to figure out the best way to keep the edge but I've bought a whetstone and I am going to practise on one of the many cheap blunt knifes in the kitchen drawer.

yes these knives are better than photos show.
very sharp from the box and have remaind so.
I am shore these blades are the equal of much more exspensive knives. ie double the price.
please don't use a steel to hone they need a strop and wet stones when they do eventualy need sharpening

I bought the "Thin Blade" knife a couple months back now, first impressions were that it is a very strong and sharp knife, it's edge remains very sharp for a long time and when sharpening only requires very few strokes on a diamond steel.
However recently I had noticed when I put it down after use, it would make this rather peculiar sound, as though it were loose and vibrating through its handle. I ignored this as I thought it may just be the weight of the blade, however it only became worse and now it has become very loose within the handle and the blade actually wobbles side to side whilst in use.
I guess you get what you pay for and it has been used almost daily since I bought it (I am a chef), however if you are looking for a knife that will see till the end of the year, look elsewhere.
