Imagine the wonderful aroma of freshly baked bread in your own home and the delicious taste which home-baked bread guarantees. The Breadman Healthy Options by Russell Hobbs takes home bread making to a new level, by introducing a wide range of features, designed to bake a vast range of bread products, all with the minimum of fuss. Breadman Healthy Options by Russell Hobbs is a high performance product, with over 110 cycle combinations and will bake three loaf sizes, 500g, 750g and 1kg, with a choice of light, medium or dark crusts. For convenience, a 24hr delay bake timer, gives you the option of setting the finishing time up to 24hrs ahead and the machine also features a 1 hr keep warm function.

For adding a bit of variety to your recipes, Breadman Healthy Options features a handy fruit, nut and herb dispenser. This feature allows the additional ingredients to be added at the precise moment, even if you are not at home. Simply add the ingredients into the dispenser and select the “extras” function and these will be added to your bread, during the baking process.

In addition, the machine also has a 10 minute fully random pause control, which allows the user to intervene during the baking cycle. With this feature, you can add a decorative crust, add crumble toppings, glaze the crust or create a rustic Mediterranean type bread.

Breadman Healthy Options has a number of pre-set programme controls, these include, white, wholewheat, french, fruit and nut, cake, jam and pizza dough. A rapid program, is available on the first four programs and gives you the choice of reducing the program time by 1 hour. A bake only cycle with variable temperate control uses the machine as an oven. Use this program to bake dough you’ve made earlier or ready prepared dough from the supermarket.

Versaility is the key with Breadman Healthy Options, in addition to the standard programs, the machine has 5 memory cells available for creating your own recipes. This will prove invaluable for experienced users of the machine, who wish to create their own unique recipe. In addition to the personal memory cells, you can also change any of the standard programs to suit yourself. Should the power fail, for less than one hour during the baking process, the Breadman Healthy Options features an Instant Recall power failure back-up, which will resume the program, once power is restored.

A viewing window on the top of the unit, allows you to make sure your bread is being prepared as you wish and is also very handy for keeping a check on what stage of the baking cycle the machine is at. The Breadman Healthy Options is also designed for easy cleaning, the lid, loaf tin and kneading arm can all be removed and washed in warm soapy water, while all other surfaces can be wiped clean, ready for use next time.

The Breadman pro which I had previously was better engineered and absolutely reliable, till the electronic panel died.

1 The 12683 does not seem to operate well with the 1lb size recipe on the card provided. I used the rapid setting. After a number of trials I could only get the smallest size loaf with a tried and trusted recipe from elsewhere. I manually shaped the dough ball across the tin before rising began. Result - a perfect 1lb loaf but, with intervention.

2 The 1.5lb setting for white bread seems more successful. Some uneven colouration on sides of loaf, therefore, dark crust not recommended.

3 Rapid setting is about 2 hours or more depending on size of loaf and crust chosen.

4 Packet machine bread, rye with seeds 1.5lb loaf worked out but, evidence of unmixed product around the finished loaf. Heavier dough may need a bit of help with a rubber spatula. This is a loaf made on a full length programe of around 3 hours. (Not unusual)

5 I do not like the individual wipe down recipe cards. I can see where they could be practical but there is a lot to be said for a book or booklet where you can place markers for favourite recipes and easily find them again. Finding a bread recipe with this system is like filtering through a deck of cards. I have tended to leave notes in between some recipe pages in a book, either on what worked, or didn't, corrective measures that worked, variations on themes and so on. You can't do that with the cards.

6 The 'healthy options' relates to the variety of recipes offered with the cards that come with the machine. What is missing is the healthy option of making bagels. This machine doesn't do it, my previous machine could. As for all the other recipes on offer, my tried and trusted book, available for years, has given me those recipes and more. I am not likely to be as adventurous with this machine as I was with the last one.

We're just in the process of returning the Breadman to Amazon or Russell Hobbs. We've had it for approx. 8 months and it's been making lovely healthy bread. However, the mechanism for holding the bread tin doesn't work now (2 metal prongs at either side of the bread tin), so when it's kneading, the bread tin now lifts up and rides on top of the rotating base so it doesn't get kneaded. Now I can see the problem with it I can't even see how a direct replacement would satisfy the problem in the long term. I would prefer a refund or a similar Russell Hobbs with a totally different fixing system.

Just to put the other side of the coin to the previous reviews, I've been using my Breadman for a while now with never a hint of trouble. Quality control from items made cheaply in China do not always seem up to scratch so maybe the previous reviewers were just unlucky?

The Breadman is quite large, good if you want to make a large loaf, bad if you want to hide it away. It is quite easy to use though the small LED display can sometimes be a bit hard to read in poor light or at an angle. It comes with an array of options, including settings for how light or dark you want the loaf, various types of bread and sizes, dough settings and a convenient `bake only' setting for pre-prepared dough. I have found it to perform very well in use; yes, I've had the odd failure but that is down to the correct balance of ingredients, like any machine.

True, the breadpan just clips into position with metal lugs, but this is not unique to the Breadman design. Mine have proved reliable, and it is possible to bend them gently back into position (as I did with my previous breadmaker, not a Russell Hobbs). A flaw in the design (again not unique to this) is the dough hook fitting, which slides on the pan spindle; it should be removable but I've never been able to get mine off. This makes cleaning a bit fiddly.

Like most breadmakers, when you remove the loaf you will get a `hole' where the doughhook was. Also common to many machines, the viewing window is quite small, deliberate since the inside of the lid has a reflective finish designed to help brown the top of the loaf; still, it is adequate and does not seem to `mist'. The silver finish has stayed looking good (no sign of rusting, unlike my toaster!) though it does tend to show up fingermarks easily (quite a pain to clean).

If you want a breadmaker which can make a large loaf, with a range of options, this is well worth considering. I've never regretted buying mine, and still use it regularly. Shop around to get a good price.
