Product Description

In this book the prestigious chef Joan Roca, at the head of the celebrated restaurant El Celler de Can Roca, introduces a top selection of traditional Catalan recipes from among those his mother, Montserrat, has always prepared at the Can Roca restaurant in Girona, where he began his professional training. The foundations of the cuisine that now bears the name of this master chef are encompassed in these pages: from the fried calamari to the delicious crema catalana, as well as the festival cannelloni and the fish suquet. The recipes are explained in a straightforward fashion for the inexperienced cook and complemented by interesting observations about the different products, preparations, versions and presentations of each dish. Over one hundred twenty recipes that comprise a small tribute to traditional Catalan cuisine, the ROOTS for that of El Celler de Can Roca.

5.0 out of 5 stars An essential guide to Catalan Home Cooking 5 May 2012
Format:Kindle Edition|Verified Purchase
Joan Roca is the 3 Michelin starred master behind one of the most celebrated restaurants in the world, El Cellar De Can Roca in Gironda. In this book, he celebrates the sort of cooking that he and hus brothers grew up with at the traditional catalan restaurant his parents ran and which has influenced the love of fine food and respect for ingredients that are the signature of El Cellar De Can Roca.

Catalan cuisine isn't something i'm very familiar with, loosely imagining it as influenced by Italy and France but not with a clear idea of what makes it "it" if tht makes any sense. This book is the perfect introduction, a fantastic selection of Catalan recipes delivered with generosity and passion. Interesting dishes that I'll be attempting before too long include lettuce omelette, cod with raisins and pine nuts, sardine rice, cuttlefish and potato stew and Duck with pears.

The book also introduces the classic Catalan techniques, culinary concepts and recipes that make it distinctive. A lengthy section on bread soups has given me extensive options for this simple, delicious and versatile principle and similarly the casserole noodle dishes have introduced a whole new kind of cooking that I had never really tried out.

Joan Roca's superb recipes are complemented by interesting "comments" sections after each recipe, where he explains the significance of many of the dishes and the cultural history surrounding them. So, for example, there's a recipe for bread with wine and sugar which, Roca explains, was often given to the youngest and oldest in the family as a tonic to whet the appetite, or simply eaten as an afternoon snack.

1.0 out of 5 stars huge DISAPPOINTMENT! 12 Dec 2012

This is not a recipe book. It is a description of the typical cuisine of Catalonia, much of which you will almost certainly NOT want to eat. I had hoped to have some suggestions from the amazing food at the El Celler restaurant but this did not happen. Disappointed
