I was given this book as a present a couple of years ago and I have been really pleased with the results! I agree with previous reviewers that some of the quantities are a bit excessive for the home cook. Who for example would use 20 egg yolks at home to make a batch of ice cream?! Not me! I have made the pannacotta which was delicious (I halved the recipe and made 6 pannacotta) and I am a huge fan of the various fruity frangipane tarts. I tend to make up the full batch of pastry then freexe half for another time. I then just halve the filling ingredients and use a smaller tin and it works perfectly. Love this book and will be buying more of the pocket range.

This cook book provides some interesting recipes and ideas for extending the range of a kitchen if you are a semi professional or professional cook and therein lies its problem. For a domestic cook the volumes suggested are huge.For example a sorbet recipe demands 2 litres of fresh lemon juice which generates a considerable volume of the final delicious sorbet. All the recipes for french tarts are for 14 servings. Setting that aside the end result is delicious food. The flavour combinations are wonderful. No endless ingredient lists either. Here, fewer ingredients combine to produce food where the taste matters.
