No matter what your taste is in steamed or baked pudding, you will find a receipe here to suit you. The Lord Randall's, made with apricots and marmalade, is good enough to serve to company. I'm an American who enjoys sampling steamed puddings in England but whose pocketbook only allows 1 or 2 trips a year. This book gives me the "real thing" without costing a fortune.

If you live for pudding as I do, buy this book. You will not regret it & your family will love you for it.

This is a book that will instantly tempt you into steaming and baking puddings. It has wonderful photographs and the writers'enthusiasm for their subject shines through. But only if you're a very experienced baker and one to question a recipe and change it as you seem fit will you succeed with any of the ones given here. If you follow them to the letter you'll be very disappointed. I've baked three today.
The Chocolate Pudding had much too chocolate topping which means that half of it stuck to the (well) buttered basin. I then cooked the Sultana and Butterscotch Pudding which had so much water in the sauce poured over the cake mixture that it completely drowned it. With the result that coming out of the oven it was just a sticky mess with the 'butterscotch'water and the butter all floating around. Couldn't eat it.
Then came the Apple Dappy. This was not so bad but it did not say that to be successful you HAVE to make a light syrup out of the sugar/water mixture, it's not enough to "heat gently, stirring until the sugar is dissolved".
If, as I say, you have a lot of experience you can put a remedy to these drawbacks and end up with a wonderful pudding. Otherwise there's no need to cook from the book, just sit in an armchair, read the titles and look at the photographs and dream on, you will not be disappointed!
