Every professional cook should avail him/herself of this book as it is so indispensable. It is so well explained,& easy to understand. Too bad that it was not available when I first studied cookery at WestminsterTechnical College in London in 1971-73.This book which I bought from amazon.co.uk, was in fact a gift for a colleague from Spain here in Canada,and he was amazed at the layout of the book....he fell in love with it. I already had this book for some time earlier.A superb book!
