This is an excellent book for anyone starting their career in the catering industry. My brother had this book at catering college. I started reading it in bed to get to sleep. I was instantly hooked,

i am currently working as a chef and have been for the last 7 years. I'm so glad i picked this book up when i did.

I still use this regularly and it includes just about everything you will ever need to know from the staple basics throught to some top notch recipes.

You cannot go wrong with this book.

I brought this book for college was recommend by the college and this book has everything you need step by step is so easy to use I had this book from year one of college and i still have it now 6 year on all the stuff in it is commercial so your recipe will make a lot of serving so all I did was say it serves 15 and you want to make five you just take away 2/3 of the ingredients and bobs out uncle you have you five this book has every thing including pastry,bread,starters,mains,soups,and the best bit the pudding and if I remember right I think it has all the cuts of veg and other stuff like meats and stuff but 100% amazing would recommend to any one who would like to have a go at cooking or any one thinking of doing catering at college this is a cooking bible
