MinoSharp Easy To Use Ceramic Water Wheel Sharpeners - for some people, learning the skill of intermediate sharpening with a ceramic or diamond rod is difficult. It is essential that you maintain your knives on a regular basis and it will be easier to maintain them for the long term. Global recommend the use of a water wheel sharpener called MinoSharp and MinoSharp Plus. These are hand held ceramic sharpeners and no experience or skill is required to use them simply fill the reservoir with water and run your knife backwards and forwards a few times. The revolutionary ceramic wheels ensure the blade is sharpened at the correct angle.

I have two sets of knives at home - Wustof and Tojiro. I do alot of cooking at home and to be honest, I prefer to chop with my knives rather than at times, using a mini food processor or the like. Having attended cooking school in my spare time, I was told that if you have a blunt knifes, the best way to sharpen your knife is to use a water whetstone but to get the proper edge on a blade, this will mean you'll need at least 3 whetstones with a coarse, medium and fine grit in order to bring the "edge" back on a blunt blade. Once sharp, the idea then is to maintain the edge buy using a sharpening steel to hone the blades each time after use. 3 whetstones? What a palaver and I dont have room in my kitchen to store 3 whetstones. Maybe if i'm in a professional kitchen, but i'm not, I'm just a home cook.

Then I read about the Minosharp 3. It has 3 water whetstone rollers - coarse, medium and fine and the wheels are replaceable too! The device is simple to use on both my Wusthof and Tojiro knifes and they are now extremely sharp. I did have reservations at first that it is only for Global knives but it works just as well on my knives which have both European and Japanese blades.

How does it work? You lift up the clear plastic lid, fill it with cold water, close the lid and run your knife through it 8 or 9 times starting with the coarse wheel, then the medium wheel and finishing with the fine wheel. The wheels are colour coded and angled too so that it will give about a 12-15 degree angle on the edge. Brilliant!

The only downside I cant say about this device is that it does leave a little scratch on the side of your knife. This is a minor issue as your knife will still be super sharp. Also, it doesnt sharpen right to the tip, about 0.

This sharpener is fantastic.Used on proCook knifes, it has brought them up sharper than new!!(wish I had found this before wasting LOTS of money on a diamond fischer chefs steele and a whetstone) I cannot recommend this product highter, its great!! very simple and fast to use, and the results cannot be beaten.Has made my knives a joy to use.Hope the wheels last a long time, but you can tell it is a quality piece of kit, so am sure they will(if not replacements are avail on ebay etc if needed)BUY IT !!!! I promise you will not be disappointed.

I'd bought this terrible knife sharpener which, as it turned out, had nothing to do with Global at all and took metal shavings off my very expensive Global knife. After getting a refund for it. I went to a shop and was advised by the owner, a former butcher to buy this one.

It restored the edge of my precious Global knife and sharpened all the other one perfectly. It is an expensive sharpener but if you want sharp knives and are willing to pay the price, I highly recommend this one.

I am truly amazed at the performance difference between this and the less expensive (2 wheel) Minosharp. This model is SO MUCH BETTER and well worth the extra cost. As well as having 3 wheels, which are significantly larger than on the 2 wheel model, this unit is also more robust, stable, comfortable and easier to use.
I was never really satisfied with the performance of the smaller Minosharp on my Global knives, so when one of its wheels broke I began looking for something better. Being sceptical about buying another Minosharp I almost bought a different type of sharpener that has 'Global' in its name, however, after reading a number of unfortunate reviews of that product, I chose the slightly dearer Minosharp Plus3 instead. Now, after very little effort, my precious Globals are back to their brand-new sharpness and are once again a pleasure to use.

Mr r Hyndford - 'A waste of money' You sir, do not know what you are talking about!

I have around 6 global knives of varying types and also use MinoSharp wet stones

1/Medium 1000 grit, and

2/Super 6000 grit

to sharpen them, afterwards I strop with a leather belt, to further polish the edges.

They are then sharp!

Today I went and picked up a GLOBAL G2 Cooks Knife 20cm and a G-48 Santoku fluted knife 18cm in Cardiff, and also a MinoSharp Plus Sharpener 'to try out'.

After bringing them home, I found by comparing the new knives to my older others, they did have the edge on my other sharpened knives, not much but 'the edge' nonetheless;

I ran my knifes only through the fine (yellow) part of the sharpener as these where already there more or less.

WOW!

I managed in 20 or so stokes to restore my 5-6 year old knifes to factory standard! They are again scarily sharp which I love. Why didn't I do this all along!

Sorry to sound 'cheezy' but this sharpener puts the 'edge' back on your knive/s.

I can tell you that I have tried a Chef's Choice diamond hone, Electric power stone Sharpener & Wetstones (Which are also amazing) and I would send all back except my wetstones and minosharp plus.

The minosharp plus is easier to use than Wetstones and cleaner, but there is something I find satisfying about 'manually' using Wetstones to sharpen a blade, relaxing almost?

From the off if you use the yellow before and after, 10 strokes max, your knife will always stay like razors. I will be from know on, only using to polish up my blades on Wetstones maybe every six months, hell I may be able to go once a year.
