Scrumptious French Macarons,

The book is full of good ideas, well illustrated and very easy to follow but don't deviate from the instructions. For best results purchase the paste colouring from a specialist cake making shop for really vibrant colours because the cheap liquid supermarket variety will make the mixture too runny. I have a couple of Macaroon books and tried this one as the vanilla macaroons looked good. Ifollowed the recipe but they were a disaster. The recipe didn't read well,to start with. I had to keep going back and reading it again. There was a single use for the vanilla bean, although the author did say it would be used in both the filling and the macaroons. The resulting cookies were grim.The mixture was too liquid to hold it's shape, and just ran all over the baking tray. I was very disappointed. I'm an experienced baker but didn't feel I could offer these to my guests. They aren't cheap to make either, with large quantities of ground almonds and eggs, all of which ended up in the bin!

This is a very pretty book to look at but the recipes are quite difficult. All the methods used are Italian meringue. I think a macaroon recipe book using this method and the French method would be far more useful.
