Now I can make American pancakes!

When my daughter, who often has to be persuaded to eat, came back from America raving about American pancakes, I was delighted. I set about making some for her - with sometimes sad, sometimes laughable results! I just couldn't get it. Apparently their pancakes are much nicer!
A Google search revealed that they are thicker, but pouring the batter thicker didn't get the results we wanted.
Enter this book. It is a quick read - thankfully, my daughter was wasting away! - and it revealed the reason for my American pancake failure - lack of raising agent. English pancakes don't use it, American ones do. That is what makes them fluffy and thick.
We have tried a number of recipes from this book and they have all worked (something of a miracle for me, I'm a bit of a klutz in the kitchen).
As a bit of a health nut, I was delighted that this book is realistic about the nutrient content of regular pancakes and the effort put in to include ideas, ingredients and recipes for making them a bit healthier. Some of the ingredients sound a bit unlikely but they actually work! Sweet potato was a particular favourite for us and we're going to try the quinoa ones next.
