The heat resistant strainer catches unwanted bits, and the stopper prevents fat from rising to the top of the spout. Once the gravy has settled, remove the strainer and the stopper and pour out perfect gravy. A shield prevents the gravy from spilling over the top of the Separator instead of through the spout. I've had a number of different plastic fat separators and most have become cracked over time with exposure to the high temperatures of hot fat coming from a roasting tray. However, this one, that I've had for couple or years or so, has not cracked and does the job well. It has a good capacity and the removable sieve catches larger bits and pieces that have not dissolved, though I do sometimes have to pass the separated gravy through a finer sieve before serving.
It is dishwasher-proof and doesn't retain any meaty smells after cleaning, which is a bonus as I have another use for it in which any carry-over smells/tastes would be a problem, viz., I collect the outflow liquid from a juice extractor for such fruits as pineapple, that create a foam on the surface of the juice, straight into the fat separator. I can then pour off the clearer juice leaving the foam behind.

Recently purchased this item and am so far pretty pleased with the results. The bung in the spout works a treat and I found the variety of measure units printed on the sides very helpful. Sturdier than other fat separators I've tried. The only reason it didn't get 5 stars was because 1) there was some occasional seepage of liquid from between the grey strainer section and the jug as it was poured - not as snug a fit as it could be - and 2) cleaning the spout is a little awkward as it's very narrow, particularly where it meets the bottom of the jug.

For its price, performance and usefullness any its easyness to clean, this is an excellent buy which delivers delicious fat free gravy. I would recommend it to any gravy lover.

good grips fat separator
very good design - is only separator i have used which actually works. the bung in the spout prevents it from filling up with oil so you can have fat free gravy

Great gadget
