Disappointing - lists all types of nut butters on the front, but only has one generic recipe for nut butter a few horrible photographys and some very strange recipes. So, I then ordered 'The Nut Butter Cookbook', thinking it was a different book (has a completely different cover as well as different title) and it is the exactly the same book; really annoying.

Another Great Book from Robin Robertson! 12 Feb 2013

I'm a big fan of both nut butters and Robin Robertson's cookbooks, so it's as if this book was made just for me! Nut Butter Universe contains recipes for everything from soups and starters to main dishes and desserts. There are instructions for making your own nut and seed butters, nut creams, nut cheeses and even cashew sour cream and mayo. There's a nut butter primer that starts with the history of peanut butter and has info on buying and storing nuts, dealing with nut allergies and cooking with nut butters. The Plant-Based Dietitian Julieanna Hever wrote the book's forward, which if full of nutritional information about nuts and nut butters. All of the dishes use easy-to-find ingredients and have simple, easy-to-follow instructions. Gluten-free and soy-free recipes are clearly marked and many recipes have gluten and soy free options.

When a new cookbook arrives, I usually sit down with it and a pad of sticky notes and mark the recipes I want to cook, but I haven't been able to do that with Nut Butter Universe because I want to make every dish! I've made several so far and my favorites have been the Szechuan Stir-Fry with Firey Peanut Sauce and Bryanna's Chocolate Double Nut Clusters. (Those nut clusters are highly addictive!) Quinoa and Black Beans with Cashew Queso Sauce is also an excellent dish, and I even caught my cat Archie trying to eat some of the amazing cashew queso! I'm looking forward to cooking (and eating) my way though the rest of the book!

I've been a fan of Robin Robertson's for quite some time, and she never fails to impress. I have also been obsessed with nut butters, specifically peanut butter, from before I can remember. Yes, there have been times when I have taken a spoon to the PB jar, and I loved every minute of it! Since then, I have discovered other nut butters that are just as decadent, such as almond and cashew, and I've never looked back. This cookbook includes all of these, and more--walnut butter, pecan butter, and even seed butter, such as tahini. And it results with some of the most amazing recipes I've tried. So creamy and satisfying, you won't be able to resist. Some of my favorite recipes from the book include the Curried Chickpea Stew, Almond-Quinoa Fireballs, Sweet and Spicy Stuffed Peppers, Mashed Sweet Potato Bake, Creamy Mushroom Breakfast Burritos, and the Oatmeal Nut-Butter Bars. I have tried many of the recipes, and I just can't stop--I think every recipe will be just as tasty. Also, there are some beautiful pictures featured in the middle section that will leave you salivating.

Be sure to grab a copy, because you won't be let down!

I have been a long-time fan of Robin Robertson. Her creativity and ingenuity combined with her prolificness is exciting for anyone looking to create simple, delicious vegan recipes and never run out of options. Her latest treasure - Nut Butter Universe - is chock full of insanely delicious choices, it's hard to know where to begin, from Peruvian Peanut Potato Soup and Linguine with Thai Pesto to Peanut Butter Cups and Pineapple Coconut Cheesecake. Plus there is an entire nut butter 101 class built in to help you save money and keep it pure. I have to add that I am beyond honored to have written the foreword for this gem, sharing the extraordinary health benefits of nutrient-dense nuts. Every recipe I have tried from this cookbook has been superb, beyond satisfying, and I highly recommend this book to anyone looking for decadence, health, and ease in the kitchen.

Nut Butter Universe by Robin Robertson is genius. Nuts are not only delicious, ranging from mild and sweet to tannic and robust, but they are also amazingly versatile. Robin shows us just how versatile and innovative the humble nut is.
Book tour!

First, Robin walks you through the ins and outs of nuts, from something as basic to making your own nut butters (we all know how super expensive nut butters are versus the whole nut) to making "Cashew Sour Cream," "Cashew Cream Cheese," "Cashew Mayo" and "Nut Cheese Sauce." She utilizes the mildest of the nuts to make staples that we all need in our repertoire - all without the need of commercially prepared products.

Second is Soups. Soups are first in my heart, especially in this cookbook! I've had the "African Peanut Soup" - omg, this is so good! It is unlike any other peanut soup I've had. It is creamy and tangy and has tomatoes and peppers floating in it. Also not to be missed is the "Creamy Mushroom Soup." Lives up to its name, then some. This chapter also has "Carrot-Cashew Soup with Apples" and "Artichoke-Walnut Butter Bisque" to name a few.

The third chapter covers Starters. I've had the "Spinach-Walnut Crostini" - to die for! Creamy, crispy...and good for you! And the "Savory Three-Nut Pate"... another winner! This chapter also includes dishes such as "Wonton Crisps with Thai Peanut Sauce" and "Smoke and Spice Almond Hummus."

Fourth, Salads. This chapter has nine salad recipes, including "Roasted Nicoise Salad with Cashew Dressing" and "Pecan Lover's Potato Salad."
As Side Dishes are not ignored, Robin has ten recipes to tempt your palate. I've had the "Braised Carrots with Macadamia Butter" and the "Spicy Walnut Green Beans." Both outstanding.

Main Dishes are the crowning glory. I've had the "Linguine with Thai Pesto," (ingenious!), "Pasta with Cauliflower-Cashew Alfredo" (equally amazing and creamy). Other offerings in this chapter include "Vegetable-Cashew Korma," "Chestnut and Winter Vegetable Pot Pit," and "Broccoli and Rice Noodles with Hoisin-Cashew Sauce." There are 13 other recipes in this chapter that highlight the best of nuts.

Seven, Sandwiches. Oh, yeah! This is another favorite chapter of mine. From here I have had the pleasure of indulging in "Roasted Eggplant Pita with Garlicky Lemon-Almond Sauce" and "Walnut Butter Waldorf Wrap." Both have become standby sandwiches in our household. Other sandwich recipes here are "Chocolate-Hazelnut Panini Sandwich" (move over Nutella!) and "Nutty Buddy Burgers."

Not done, yet! Chapter eight covers Breakfast and Beyond. We're talking "Mushroom-Cashew Breakfast Burritos," "Apple Almond Butter Pancakes," and my favorite, "Handcrafted Granola Sunflower Bars." We have not had another camping trip without these in our bags; my kids won't let me!

Chapter Nine is stuffed with Desserts. At a whopping 15 recipes, your sweet tooth with be more than satisfied. I've enjoyed Robin's "Double-Dare Peanut Butter Cake," "Three-Nut Butter Cookies," and "Chocolate Peanut Butter Cheesecake."

Finally, after all of the other recipes, Robin continues the parade of innovative dishes with Sweet Treats. Savor "Peanut Butter Cups," "Chocolate Macadamia Truffles with Coconut," and "Too-Easy Chocolate-Peanut Butter Fudge." Really. You won't be disappointed. I haven't been! Decadence!
Overall, this is an innovative, genius cookbook by one of our most beloved cookbook authors. This book, happily, is unlike any other book by Robin. That is part of the allure and appeal. She continues to pioneer new recipes and introduce our taste buds to new flavors. She considers gluten-free and soy-free readers and lets us know which recipes are appropriate and how they can be changed to be so, if applicable.

I love this book. It is one I reach for again and again. Nuts are nutritious and highly delicious. I am thrilled that an author of Robin's caliber has opened my eyes to so many different ways nuts can be used with so many different results. Five stars to this book.

I've mentally bookmarked just about every recipe in this cookbook - they all sound so delicious! I've made a couple to date (Indonesian gado gado and a really awesome broccoli soup with almond butter that creates a creamy texture), and both have been stellar. The recipes include lots of flavors and textures, and yet the preparations are simple. Add nut butter into the mix and this cookbook is another favorite from Robin Robertson!
