This would be one of my fave North Frican cookbooks. The author has taken great care not to make it a Moroccan cookbook with some extras thrown in, but has given each country (Egypt, Tunisia, Morocco) a fair and equal representation, with a few Libyan and Algerian recipes thrown in too (as these mirror the others anyway). There are recognisable dishes like Melokhia, koushari, chicken with preverved lemons and olives and bamia plus a few extras. Overall a lovely book, well laid out and great recipes.
