About the Author

Nathan Outlaw has been working in restaurant kitchens since the age of 14, along the way learning from such great chefs as Gary Rhodes, Eric Chavot, Rick Stein and John Campbell. Restaurant Nathan Outlaw opened in Fowey, Cornwall, in 2007, and for three years was judged best restaurant in Cornwall. In 2009, Restaurant Nathan Outlaw moved to the St Enodoc Hotel in Rock, where he also opened a second, less formal restaurant, the Seafood 'Bar and Grill. A feast for the eyes and taste buds with plenty of well thought out seafood based recipes, take things further by going seasonal, as with all recipe books follow the instructions the first time and if you like it brilliant if not make changes to suit your tastes. There are many things where small adjustments in seasoning, ingredients quantities or cooking times can make things just that bit better.
This is a good book full of ideas and some new to me recipes a keeper

This is a very good cookbook. The excellently named Nathan Outlaw is obviously a fine chef who cares deeply about fish and seafood and who knows a great deal about the subject. The book is attractively produced, clearly set out and illustrated with beautiful photographs.

One of the best aspects of this book for me is the general information about various fish - when they are in season, how best to cook them, sustainability and so on. The recipes generally allow the flavours of the fish to speak for themselves, enhanced by delicious sauces and vegetable accompaniments. I must admit that, for me, most will probably be more of a guide and a source of inspiration than recipes which I will use as they are in the book; they are pretty complex restaurant recipes and although I'm a fairly competent cook I baulk at some of them. Also, my kitchen isn't liberally stocked with things like stock made from the roasted bones of a turbot. There are simpler recipes, but in general this is at a level beyond what I would normally cook other than for a special event.

There is a lot of really valuable stuff here, though, and there are plenty of ideas which can be adapted. I would recommend this book to anyone with an interest in cooking fish and seafood - there is lots in here to interest and inspire.

So, I've looked at some of the other reviews - good and not so good.
In my eyes it's pure cookery porn!
The whole book looks fabulous, the recipes are often complex but sound and look wonderful.
I have quite a shelf of cookery books and I seldom slavishly follow a recipe, but I do spend time looking at them.
The DK book of Seafood is another cookery "porn" edition - this is as classy and in my eyes as good.
Will I spend hours sourcing the finest Cornish fish and then slave over the cooker to produce one of Nathan's masterpieces - probably not. Do I enjoy looking through it and reading the recipes and useful fish facts, etc. YES YES YES ! ! !
I must admit to enjoying non-fiction books - Wolf Hall isn't for me - Nathan Outlaw's British Seafood is my sort of book. It would make a GREAT present for a fish foodie.
I THINK THAT THIS IS A WONDERFUL COOKERY BOOK!
