5.0 out of 5 stars Wonderful cookbok with unusual recipes 25 May 2010
Format:Hardcover
I borrowed this book from the library and found it useful There are quite a few Jewish recipes from Tangier that are not found anywhere else in other Moroccan cookbooks by Wolfert, Roden, Morse, etc. One of them is a dome-shaped potato patty encasing a delicious beef filling called a Parmentier - made by the Jews for the Pesach festival. Another delicacy is a Shabbat meatball dish laced with mace and nutmeg - typical Sephardic spicing. It's for these kind of recipes that I bought the book and if you're looking for the same, I highly recommend it.
