About the Author

Richard Sandoval grew up in Mexico City and Acapulco with a love of food nurtured by his grandmother, who cooked traditional Mexican dishes at home, and his father, a successful restaurateur. After graduating from the Culinary Institute of America in Hyde Park, New York, he worked in his father's restaurants in Acapulco, where he achieved critical acclaim as one of Mexico's premier chefs. In 1995 Sandoval created his elegantly designed restaurant Maya in Manhattan, where he makes his home. He has since opened Maya restaurants in San Francisco and Denver. Ignacio Urquiza is one of the top food, travel, and architecture photographers working in Mexico today. His photographs have been featured in many international magazines and books. He maintains a studio in Mexico City.

This is a magical book. Mexican food is vast, bold, spicy, festive and over all, plain delicious. Richard Sandoval brings a new element to this mix, Complexity. Mr. Sandoval polishes a Diamond in the rough.

The genius of this chef lies in the fact that he gives layers of flavor to ingredients that are known to be overpowering. Latin American food in general, is very direct and bold. It is an incredible achievement to tame and refine these ingredients, to create dishes that reveal contrast and balance, while preserving the essence of Mexican folklore.

The Mexico of these days is vibrant and cosmopolitan but has deep roots of tradition. Mr. Sandoval?s cuisine is a great representation of this era.
If you are looking for classical Mexican cuisine buy something else, but if you want to experience one of the most interesting and exciting cuisine of the last decade, this is your book.
Who would have thought that Mexican cuisine would reach this level of sophistication? After you read this book, you will never think of Mexico in the same way.

This is a beautiful book with many great ideas for creative Mexican cooking. There is not a typical enchilada or burrito recipe in the book, and the photography is wonderful.
