This is in excellent collection of most of the traditional recipes in a modern form. Each recipe comes with a suggested menu, cooking and preparation times, as well as a suggested wine (region) or other drink. Instructions are straightforward and not overtly complicated. It also comes with handy hints of how to make things easier or better. Therefore it is suitable for the not-yet-so-advanced cooks, but serves also well as a handbook for the more advanced. The book is illustrated with excellent pictures on every opening of the book, making it a mouth-watering read just by it self.
Judging from the outcome of three complete menus I've done from the book, it is by far the best cookbook I have in my shelf.

How cooking is done in the regular french restaurants in the country side.

As a chefs apprentice and a culinary student, I read a lot! My friend Ed came back from Portland with this book and I fell in love with it. The photos are simple yet perfect. The food is classic yet accessible. I love the variety and simplicity and how un-pretentious this book is. A must have for any serious cook and food lover. Great Buy!

to be brief: every one of these recipes that I have tried work. Camille Le Foll is some kind of a cooking SAINT. The book not at all incidentally is very beautiful and small. This is how to cook at home. Simple, delicious, no fancy pants but no compromise on quality and taste. Totally French, absolutely fresh.
