    This pan is fairly heavy, and you will need to consider either preheating it, or giving your roast another ten minutes in the oven.

    It spreads heat very uniformly, and the inside at least is easy to keep clean. Unfortunately the pressed aluminium insert is anodized, but not non-stick coated, and is not easy to clean. But who cares? A roasting tin is a roasting tin, and likely to get grubby. It is possible to start the cooking on the hob, and indeed, if you happen not to own an oven at all, or can no longer bend down to get into it, you can still do your roasts on a ring.

    Aficionados of French cuisine will realise that this pan makes a superb alternative to a cast iron cocotte, and for those of us with arthritis and weakening muscles, a much lighter and more manageable one. I would recommend trying a classic like poularde au trente gousses d'ail, or gigot a la Septaine. (In fact, you should be able to get the whole thing in without breaking the bone.)

    The lid of this pan is of reasonably heavy gauge pressed stainless steel, not glass (as with the rest of the Analon range), and also fits the shallow oval roaster, which is sometimes very useful.
