These pans are quite heavy due to the thick, metallic base and look good. The handles are stainless steel but do not get very hot under normal use - most of the time the pans can be lifted straight from the cooker without hand protection. The lid handles are often hotter than the pan handles due to rising steam.
Curiously, whilst Amazon says the pans are oven safe to Gas Mark 9 without lids, the manufacturer says they are safe to this temperature WITH the lids. They are not non-stick but it is recommended to use the minimum level of heat necessary to cook your food but to allow sufficient time for the pan to heat in advance, unless you are boiling water for pasta, vegetables etc, when a greater level of heat is permissible. If you do this, food will not stick (it has not happened to me yet in a couple of weeks' use). It is also important to allow the pans and lids to cool fully before washing.
I had been using pans that were several years old, some wearing thin and the bottoms no longer flat but they have now been discarded in favour of several from this collection. They are easier to use, cook faster due to the thicker bottoms and look better. RECOMMENDED.
