Zucchini Stuffed with Quinoa, Mint and Cranberries:
Zucchini is the kind of vegetable I simply cannot resist when I see it in the market ... This time they are filled with a rich mixture of quinoa, mint and cranberry sauce with maple fragrance. Finger licking good!
If you are lucky enough to find rounds zucchini at the markets, don’t hesitate! Just buy them! They are fun and easy to scoop and fill.

Ingredients:
• 8 zucchinis
Stuffing:
• 1 cup quinoa
• ½ cup chopped mint
• 1 onion, chopped
• 5 Tbsp. toasted pine nuts
• ½ cup cranberries
• 1 tsp. Baharat
• Salt and pepper to taste

Sauce:
• The insides of the zucchini
• 3 large tomatoes, cut into quarters
• 1 Tbsp. sugar
• 4 cups boiling water
• 1 tsp. Baharat
• 1 tsp. cinnamon
• Salt and pepper to taste
• 2 Tbsp. natural maple syrup

Preparation:
• Core the zucchini and keep the insides for the stuffing and the top for cover.
• Pan fry the onions in olive oil until lightly golden. Remove from heat and cool.
• Mix the onions with the other ingredients of the filling, stuffing the zucchini and closing the top. Densely arrange a wide flat pan.
• In a blender, mix together all the sauce ingredients except the water to create a paste. Mix it with boiling water and stir. Pour over the zucchini and cook over low heat for about an hour at a gentle boil.
• Bake in the oven on medium heat, uncovered, for about fifteen minutes for a final brown.

I am quite good at stuffing the odd pepper now and again but the author knows how to stuff nearly everything. It is a very well organised book with something for every taste whether you are a meat eater or vegetarian. I love stuffed aubergine from Turkey and found that there's a recipie for that in the book along with a vegetarian alternative. There are so many recipies I want to try out and most seem easy. Love this book and the Indian Cookbook by the same author has great recipies too.

The pictures make me hungry, just thinking about them. This book has a lot of info about how to make great food, how to prep the food and so on, and then tons of recipes of course. I'd do the preview and then check it out. If you like some good, different and cultural (often) food--you'll be happy with this book.

Recipes with flavors of HOME... Yummmi! Just finished going through the book. I love oriental food and especially food from the Middle East. I Loved the easy to follow recipes and the way that the recipes are written. the recipes really reminded me the food that my mom used to make, i just didn't know how to prepare them till now... If you love middle eastern food and especially stuffed oriental dishes- this book is the best

Ms. Barak has written a wonderful, sharing cookbook. She gives practical tips on what to choose and how best to cook stuffed foods. The chapters are organized well, with lots of Mediterranean recipes, pasta, vegan, cheese, and a few desserts. When the author writes the end notes, it is obvious that she is not fluent in English. I admire that she obviously hired a competent editor to have the recipes in perfect English.

I admit that I've never been very competent at stuffed foods, with everything spilling out. NOW, I know how to combat that! I am delighted to recommend this book to cooks who span from "just better than novices" through experts.

I see why this book is in the top ten of books of this kind. I love mediterranean food and the food here is absolutely delicious. The recipes are easy to make and the book is easy to understand. A sampling of this book will leave your tummy smiling as it did mine. They say to a man's heart is through his stomach. Well if this is true, then it applies to reviewers also. Great recipes, nice pictures, good book.
