This has to be lesser of all malted flours I've tried. I wish there was some way I could have tried it before buying in bulk....

Pale and creamy in colour, the flour is speckled and lacking in malted flavour and malt flakes (running my hand through the flour, it's not evident). Following a typical 'white loaf' recipe using full yeast (7g instant/15g fresh) with two retarded rises, and a final retarded rise in a tin, it still lacked full and sweet malty oomph.

With barely any added fat (2 tbsp butter), it did not keep well. Toasted, it was really rough. Crumbly despite it's strength, this is a big disappointment. Note Marriages do not provide a basic recipe (only a sweetened one), so you have to go with your instinct. I followed their Malted Olive Bread recipe on their site, the only one using this flour, without the olives naturally.

What irks me is the fact I have to buy additional malted wheat flakes, blend it out with some rye and wholemeal wheat four and add malt extract/powder to the 'mix' to achieve anything near pleasurable.

Suffice to say, a waste of money when one could have gone plastic and plumped for Hovis' Granary flour.

One would not have to resort to buying pre-mixes if only the malsters didn't hog all the barley in this country. If only a thoughtful soul would save some for the bread bakers....Unless I'm mistaken, but (malted) barley flour, a grain prolific in this country, is harder to find than gold.

This flour contains a lot of bran, which is not discernable from the picture or description. "Malted brown flour" does not say bran, and it ought to as bran has a huge impact on the baked product. "Brown" is not a sufficient description for "bran." Most disappointing description. I have had to mix the flour with other products to reduce the bran content to make a decent loaf.

This is very good flour however I was disappointed that I did not have long to use the product as the use-by date came along very quickly. I had previously bought other flour with the same problem and thought I would try again to see if the same thing would happen. It did and I shall not be buying flour from Amazon again. If you are a caterer you will have no problem because you will use it up quickly. I have thrown lots of bags of flour in the dustbin!
