This book is really inspiring me to use lacto-fermentation as an ideal method for preserving food...possible the only method which actually increases the nutritional value and digestability at the same time! The book shows how to use this technique, discusses why it is valuable and gives ideas on how to serve it up. Very good!

This book has great recipes and good information about health. I think that everybody who has a family should know this information.

and although it has a lot about the history of sauerkraut in it, and a few recipes for including it in your meals, I didn't really take to it. It felt as if the author was preaching to me. There was a lot about the health benefits of sauerkraut, and she even goes so far as to recommend you eat it three times a day!
I will be making some this year, but I could have found most of the information in this book on the internet, so I was not that impressed.
