Product Description

"James Beard Award winner Green teams up again with photographer Legato (after The Fishmonger's Apprentice) to produce a beautifully photographed directory on how to make all types of pasta in your own kitchen, with just a few kitchen tools. And don't think only of Italian--there are a few representative recipes from other countries, such as pot stickers, pierogi, and udon noodles. Recipes vary by shape, flour type, and flavoring. By following the easy, step-by-step instructions and hundreds of photographs, readers will be inspired to make their own delicious creations. The book contains many useful extras such as nutrition information, resources, and a glossary, but those who want to serve a homemade sauce along with their pasta fresca may need to consult another resource. VERDICT: This is a terrific choice for any library as it will be useful for both experts and novices alike. Mangia!"--Library Journal

4.0 out of 5 stars Actually about making pasta 14 Feb 2013
By M C
Unlike many books that claim to be about making pasta, and turn out to be mostly recipes for dishes using pasta, this book actually is about making fresh pasta. And not just italian pasta, but other similar "pastas" from all over the world, such as Udon noodles, gnocchi, dumplings from Europe and Asia, which adds a new level to the book beyond what you might expect of a normal pasta book.

The book describes how to use a pasta machine, and it often will make your life easier to use one, but it is not really required for the majority of recipes.

It goes into a decent level of detail about types of flour and the effect they have on your pasta, egg sizes and everything.

The author introduces her own pasta flour mix including things like semolina, unbleached flour, italian 00 flour etc. I have been perfectly happy with bread flour so haven't tried her mix, but may give this a try to see the difference. Edit: I now use Sainsbury's "taste the difference" pasta flour which is so much easier to work with than bread flour, and the cheapest such flour I can find

The book then goes on to list a wide variety of ways to colour (and mildly flavour) pasta, for example beetroot pasta, red pepper, spinach.

After this, there are sections for making different shapes and styles of pasta. Noodle style, shapes, sheets, dumplings and stuffed pastas.

There are a few basic recipes for sauce on one page. For the stuffed pasta, the steps for making the pasta also include the steps for the stuffing that is suggested to go inside them. I would have liked to see a few different stuffing recipes listed separately as well as obviously there is plenty of freedom to put in a different stuffing.

There are a number of tools and techniques employed in the book.

I love cooking, love reading about cooking and love making things. I was excited about this book before it arrived, and oh boy I was not disappointed when it did!

This is less of a pasta cookbook and more about making pasta - some of the other reviewers seem disappointed with the lack of recipes but in reality the title is a bit of a giveaway here - it's not a book of pasta dishes!

I read the whole book cover to cover in an evening - I was glued to it. It is creative and inspirational. It made me want to go into the kitchen and start cooking at midnight.

I have tried some of the ideas and they have worked out brilliantly. You do need some special tools for aspects of the creation but some you can do totally without.

I am so hooked I have actually gone and purchased a pasta making machine, but you don't need one for most of the recipes.

I have received numerous compliments about the unusual pasta, and the children LOVE the coloured pasta I have made for them.

100% recommended, best cook book bought this year without a shadow of a doubt.

4.0 out of 5 stars Lovely book 29 Aug 2013
Format:Flexibound|Verified Purchase
Only reason for 4 stars instead of 5 is that I found a big portion of the start was a bit too going into the technical bits and rather unnecessary. However, that said, when you actually get cracking on the pasta / gnocchi making, it is a nice book. Just feel it's rather too detailed and could have included much more recipes than it does.

this is a good detailed book with superb pictures. This is about the pasta itself and doesn't have many recipes for meals

I recently took up making fresh pasta.

The first thing I got was this book. It told me everything I needed to know including which tools to buy, how to make various pastas and it includes loads of receipts.

I would recommend it to anyone intending taking up pasta making.
