I'm a foodie, that probably comes as no surprise to anyone that knows me but what does come as a bit of a shock is that I like the Australian way of doing things, good ingredients that make the most of any meal's star that use components that compliment rather than disguise, that enhance rather than detract.

What makes this book a little different to the vast majority out there are the tutorials that help you learn some skills such as how to fillet fish and how to joint a chicken which whilst considered elementary by those in the chef trade, are skills that frighten the hell out of most household cooks., myself included. Add to this a list of key equipment for the kitchen and it's a wonderful book. However, my main gripe for this section, is that I would have liked a shot of the various knives that they decide are essential, after all I don't own a fish filleting knife and I'm still really not sure what they look like. Likewise when they're recommending a knife set at a hefty price (£274) I would have liked to see what many would consider affordable alternatives for the average kitchen user. Whilst this may seem minor, I do feel that it something that should be included in future editions.

That said, after the skill section is a whole host of wonderful recipes from many different styles as well as laid out in easy to follow steps alongside the occasional image to make sure that you have the keys to a successful outcome. Finally add to this tips on how to lay out a plate for the maximum appeal and you have a book that will be used time and again. Great stuff.

Excellent book that is based on the concept of a "cookery school" rather than being just another "cookery book". There's much more in here than just a series of recipes and methods. The concept is to equip you with the necessary skills, and confidence, needed to advance from a good basic level of cookery onto a more complex level. The recipes are mainly light, modern and packed with flavour, think Masterchef and you'll have a good idea what to expect, but they're possibly not the type of food you'll want to cook for the kids when they come home from school in the evening, unless you're living a Nigella lifestyle of course, they're more sophisticated. If you have time to make your own pasta and bread, if you can afford sea food and you have time to clean your own fish then you'll love this book. The layout is nice, very modern, plenty of photos and the methods are reasonably straight forward but; the ingredients might prove difficult to source unless, of course, you have an excellent supermarket nearby. You'll have to bear that in mind before you fling yourself into preparing any of the dishes. I enjoyed the skill sections and thought them very well presented and not too confusing, it's always nice to be able to prepare your own fish and meat. As someone who has spent a lot of time in the kitchen, over the years, I found the book overall a decent buy and it presents me with some challenges. However; if I was just starting out then I think I'd have found it too advanced, too complicated, and gone for a more general cookery book. 5* for an experienced cook or an enthusiatic beginner but maybe only 3* for a timid beginner....depends on how confident you feel.

Having been on the Knife Skills course and Italian Cookery Course at Waitrose, I decided to buy this book and I haven't stopped using it since. Well laid out, useful for beginners and everyday cooks and contain essential basics. Simple to follow instructions on how to fillet fish (which are a lot easier to do than you think as long as you have a good filleting knife) and joint a chicken.

As as long as you have the ingredients, you can very quickly create the yummy dishes for lunch or dinner and there are even suggestions for alternatives. Yesterday, I made the fluffiest gnocci in sage butter (I've previously hated gnocci as its always been stoggy). Today, I quickly made the pan fried king prawns with mango salsa for lunch, added a few extra salad leaves and herbs that I needed to use up (coriander and basil)and hey presto, an absolutely delicious and healthy lunch I would have happily paid good money for in a restaurant!

If you are an expert cook, this will be too simple for you, but if you are like the rest of us who don't have much time, rarely cook from scratch and always the same dishes, you will love it. I'm going on a self catering holiday and its the only cook book I will need!

This is a great cookery book which takes you from the basics of cooking to being confident of trying to make something a little more adventurous. It has useful ideas for someone who is more experienced as well. What I like most about this book is that it reflects current eating patterns in the UK and also gives good ideas on how to knock up a light two course meal at the end of the day without breaking into a sweat about it. It has truly original recipes and doesn't rehash the classics which everyone else seems to do. It's earned its place on my cookery book shelf.
