In the process of ridding my kitchen of non-stick surface cookware, I decided to purchase this griddle as add-on equipment to another Lodge cast iron pan and a Chasseur cast iron pan. I purchased it on a whim, really. It is now the most frequently used frying pan in my kitchen! It's extra easy to flip anything on this griddle due to the shallow sides.
There are a couple of dissatisfied reviews about this griddle that mystify me. I have successfully cooked over-easy fried eggs and pancakes on this griddle. It did come pre-seasoned, which I didn't find to be a problem. On the Lodge website, they say their pre-season oil is soy based:
"The cast iron is sprayed with a soy-based vegetable oil and then baked on at a very high temperature. The heat allows the oil to penetrate into the iron, creating a black patina finish with superior appearance and performance than home seasoning."
Why one would scrub this off is a mystery to me, since it gives you a "head start" in seasoning the pan... which takes time with cast iron. Patience pays dividends.
As I continue to use and care for my griddle, it will become even more well-seasoned and will probably become even more non-stick than it is now. Best of all, it will last a lifetime. I'm actually sorry I didn't buy a cast iron griddle years ago! Now I'm making up for lost time!
