I'm a low carb diabetic and I make a bread substitute with this ground flax seed. Flax is, apparently, a fruit and not a grain, who knew?
Flax bread: 150g flax seed, 25g melted butter, 2 eggs, beaten, 1 teaspoon bi-carb soda (raising agent), 2 generous pinches salt a little water to mix to a soft (not sloppy) consistency. Dump it all into a bowl and mix it up. Divide the mixture between 10 cupcake cases (smooth off with the back of a teaspoon because whatever shape you leave it in is what you get at the other end) and bake at 180C for 20 minutes. Yeah, sure you can't make a BLT with it, but you can slap butter on it. If you're low carbing then you're probably avoiding grains, but OK with animal fats, so this works just fine.
