for simply excellent pancakes, sweet or savoury!

My grandmother used to make the best pancakes, ever - on the griddle on her cooker - and this is the next best thing to achieving a similar result!

Cast iron is ideal for steady, even heat distribution and helps stop overcooking the edges of the pancake before the middle is done!
Angled handle.
Dishwasher safe, although Le Creuset do recommend hand washing to allow the black interior to form its own 'patina' (non-stick coating), over time.

Sturdily boxed, complete with an 8-inch wood crepe-mix spreader and full instruction leaflet.

Glad I went for a cast iron pan rather than one of the cheaper lighter pans. Allow the pan to warm slowly for even heat distribution and then you will be able to make great tasting thin crepes. The pan handle does get quite hot if you are cooking large batches - which tends to happen when the family realise what is going on in the kitchen.

It does take a bit of practice to perfect the technique for spreading the batter thinly in the pan and also for lifting the crepe to flip it over but the supplied wooden tools do a good job once you have developed the skills. We have mainly used the "basic crepe" recipe in the leaflet supplied with the pan but have also experimented with some others. One point worth remembering is that once mixed the batter needs to stand for an hour before using. On the plus side it does keep in the fridge so it can be used the next day as well.

It makes the best pancakes ever (I've been using one for over 20 years and it is as new -- better than new, in fact, because of the patina). But I also use it all the time for grilling meat, marinated skewers, vegetables. It's the perfect 'plancha' style grill. It has no ridges so you get a perfect grilling surface which cooks very homogeneously. It is absolutely flat so it's very easy to clean (just scrape off any burnts bits, soak 2-3mn in warm water and wipe off. Then return to the heat just to dry it, oil lightly and that's it). I also have several cast iron skillets but the fact that this crepe (and many other things) pan has almost no rim makes it much easier to handle the meat, especially with skewers which otherwise would sit on the sides of the pan and prevent the contents from cooking properly. It's one of the most versatile things ever.

Basically a flat piece of iron (including the handle). It appears that any attempt to pick up the hot pan would result in burns. I ultimately settled on the Staub crepe pan as their design is far superior.
