Cast Iron Facts

Suitable for use in the oven, on the hob and under the grill. Cast iron can also be used on all heat sources, including Aga’s and induction hobs. It can withstand temperatures up to 190 degrees Celsius. It’s excellent heat retention qualities mean that only low to medium heats are needed to ensure even heat distribution.

Le Creuset Cast Iron

Hand made in France since 1925, each piece is made from a unique mould into which molten iron is poured, this creates a unique piece, which is, then hand finished and subjected to strict quality checks. Le Creuset offers a lifetime guarantee on all cast iron (except non-stick items which carry a 10-year guarantee). You will feel the difference as our cast iron is 9 percent lighter than the leading competitor and with a perfectly flat base it is great for all hobs including glass and ceramic. Hygienic
The enamel cooking surface is completely hygienic and impervious to flavours and odours. It is perfect to hold foods that are marinating or for storing foods (raw or cooked) in the refrigerator or freezer. The interior is a smooth gloss finish in a sand colour. The interior will clean easily by hand or by dishwasher.

Adaptability
Ceramic, halogen or induction hobs, gas, electric, solid fuel or Aga/Rayburn Le Creuset cast iron will work excellently on all. Whether you are sauteing, grilling, baking, roasting or stewing there is a pot, pan or dish to suit your needs. Most pieces can go on the oven, in the oven or under the grill and importantly if you change your cooking hob you do not need to change your pans. Le Creuset cookware is available in a wide range of colours that will suit both your kitchen and dining table.

Energy Efficient
Once hot you will require only a low to medium heat setting to maintain a good cooking performance, they can even be removed from the heat leaving the food to cook in it’s own heat. These heat retention properties mean that a Le Creuset dish will keep warm for longer at the table.

Care and Use:

Before first use: remove all labels. Wash the pan in hot soapy water, rinse and dry thoroughly. Pans with enamelled cooking surfaces are now ready for use and require no further preparation.

Heat Sources: Le Creuset cast iron cookware can be used on all heat sources. Gas, electric solid or radiant plates, vitroceramic glass, induction, and ranges fired by gas, oil, coal or wood. When using on any glass stovetops always follow the manufacturer’s guidance for use of your cookware. Never drag pans across the glass, but lift on and off,or from one heat zone to another. The enamel surfaces are not suitable for dry cooking. Your choice of liquid, oil, fat or butter should completely cover the base before heating begins.

Oven Temperatures: For black phenolic lid knobs and handles a maximum temperature of 190 degrees Celsius, 375 degrees Fahrenheit or Gas 5 (Europe gas setting 6). For products with integral cast iron handles or stainless steel knobs the maximum oven use temperature is 230 degrees Celsius / 450 degrees Fahrenheit / Gas Mark 8 (Europe gas setting 9).

Range Stoves with Cast Iron Oven Linings: Do not place any cookware on the floor of these ovens. Cook only on the racks provided. Integral cast iron handles or stainless steel knobs will become hot during stovetop as well as oven use. Use a dry, thick cloth, or Le Creuset oven mitts, for handling these at all times.

How to use:

Medium and low heats will provide the best results for the majority of cooking, including frying and searing. Allow the pan to heat gradually and thoroughly, as this will give the most even and efficient cooking results. Once the pan is hot almost all cooking can be continued on lower settings.

High heats should only be used for boiling water for vegetables or pasta, or for reducing the consistency of stocks and sauces. High heats should never be used to pre-heat a pan before lowering the heat for cooking. Cast iron retains heat so well that if a pan is overheated in this way it will contribute to poor cooking results, sticking and discolouration of cooking surfaces.

Match the pan base to the heat zone to maximize efficiency and prevent overheating of pan sides or damage to handles. Long handles should be positioned safely so that they do not overhang the front of your stovetop, or over other heat zones. Do not heat an empty pan or allow a pan to boil dry. Either may cause permanent damage to the enamel and pan.

For stirring comfort and surface protection use Le Creuset heat resistant silicone utensils, heat resistant plastic or wooden tools. Occasional use of metal utensils may leave silver trail marks over the surface. Do not knock metal utensil on the rims of cookware, this will eventually damage the enamel.

Note: Do not cut foods directly on any enamel surface.

Place hot pans on Le Creuset silicone mats, wooden boards, or trivets. Never place a hot pan directly on an unprotected surface. We recommend using Le Creuset oven mitts for lifting hot pans at all times.

Electric hand held beaters or mixers should not be used in any cookware. Permanent damage to all surfaces will be caused.

After use always cool a pan for a few minutes before washing in hot soapy water. Rinse and dry thoroughly. Do not fill a hot pan with cold water or plunge into cold water as thermal shock damage to the enamel may occur.

If there are food residues fill the pan with warm water and leave to soak for 15 – 20 minutes, then wash in the usual way. Nylon or soft abrasive pads or brushes can be used to remove stubborn residues. Do not use metallic pads, or harsh abrasive cleaning agents, as these will damage the enamel and polished trims.

Light stains or metal trail marks (caused by metal tools) can be removed with Le Creuset Cookware cleaner. An occasional conditioning clean with this product will also retain the new appearance and polish of your pans.

Cleaning

All pans with integral cast iron, phenolic handles, or stainless steel lid knobs, can be washed in the dishwasher. When using the dishwasher always allow the cycle to complete before opening the door. This will ensure the pans are dried thoroughly.

Maintain the tightness of all handles and knobs by checking and re-tightening them regularly. Le Creuset enamelled cast iron is extremely durable, but it may be damaged if accidentally dropped or knocked against a hard surface.

Measuring in at approximately 33.5 cm (including handles) x 21 cm x 5 cm, the cast iron dish can be used for roasting/baking and grilling.... plus..... it can also be used on the hob.

Approximate capacity : 2.5L

Remarkably easy to wash up, by hand, although some soaking and a rub with a plastic brush may be required for those more stubborn baked-on food remains!
Dishwasher safe.

Mine has 'Le Creuset 30 Made in France' embossed on the external base.

Wonderful for an oven baked pasta dish and makes great roast potatoes or parsnip/sweet potatoes if not using for the Sunday joint. My favourite recipe in this particular sized dish is the 'Shepherdless Pie' on page 150/151 of DK's Dinner in the Freezer.

First off, Le Creuset products in general are great! We must have about 10 - 15 pieces and the cast iron stuff cooks and cleans up great! The stock pot that we have is the only piece that isn't quite up to snuff and the grille pan is a bit hard to clean, but general I would highly recommend their products. Plus they look great too...

This pan, the rectangular baker is wonderful. Meats and Fish cook great! We use ours a lot for baking fish - Salmon,etc... Its uses are numerous! It works out great because it can get so hot and it can cooks so evenly. This stuff is expensive but worth it. We like the original "flame" pattern, I have a friend that has a twenty year old set that is still going strong!

As a classically trained chef, I have an extensive collection of kitchen items not always found in a typical home. I tend to think of kitchen products from a professional point of view, although I enjoy many items made for home use. Le Creuset is uncommon in professionally kitchens; however they manufacture quality and effective products.

Le Creuset's porcelain enameled cast iron cooking vessels are cast from molten iron formed in single use sand moulds. Covering cast iron with porcelain enamel not only looks good, but has multiple benefits. The enamel, being a solid coating, is one of the most hygienic surfaces to cook on, does not stain, absorb odors, retain flavors, and is easy to clean eliminating the need for seasoning and preventing rust issues. Limit cooking tools to plastic or wood to prevent damaging the enamel.

Cast iron is a highly efficient material which absorbs and distributes heat efficiently. For this reason, it is recommended to use on low to medium heat. There are a few exceptions like boiling water where cooking on high heat is appropriate and okay. Otherwise, cooking with high heat may cause food to stick, discolor the enamel coating, or unevenly cook the food. Cast iron also retains heat, keeping food warm while serving.

This pan holds 2 1/2 quarts of food, measures 7 3/4 x 11 1/4 x 2 inches internally, and weighs 6 pounds 10 ounces. 2 1/2 quarts will typically feed 4 - 6 people when it comes to casseroles, consider the larger roaster to feed more. Except for roasts, the roasting pan tends to do best if at least 3/4 full. Any less and you may overwhelm your food with the pan's evenly dispersed heat.

Two features people tend to complain about are the cost and weight. The cost seems steep compared to common pans made from other materials. Compare to quality cookware, and the cost may seem more reasonable. When comparing to the old cast iron pans past generations have used for cornbread and camping, Le Creuset seems expensive. However the manufacturing process requires making a mould for each and every pan produced. They then go through the enameling process before shipping these heavy pans. If you take what goes into making and distributing these high quality cast iron products, the cost tends to make sense. Then consider this pan will easily last a lifetime when taken care of. Additionally cast iron is a heavy material. The enamel doesn't add much to the weight, when comparing to a similar cast iron product, the weight is going to be comparable.

I find the many benefits of Le Creuset make this pan a worthy purchase. This pan adds a desirable crispy texture to dishes like mac-n-cheese. Add a roasting rack and this pan is perfect for roasting chickens. The enamel is attractive, while the cast iron keeps the food warm for serving. Cleaning and caring for this dishwasher safe pan is easy. When properly taken care of, this pan will last a lifetime.

Knowing the benefits and the pleasure I get from using Le Creuset, I don't hesitate to recommend this pan. If you choose to purchase this pan, and use it for its strengths you won't be disappointed.

A great roaster that will last for generations 19 Jan 2010

Although I am not a professional chef I do take my cooking seriously. Over the years I have invested in quality German and Japanese knives, French copper pans and, of course, Le Creuset cookware. Although these enameled cast iron pans are not as versatile as some of my copperware they are none the less indispensable.

Since cast iron is not as conductive as copper or aluminum it heats up and cools down much more slowly. This characteristic makes it unsuitable for sautéing or for when you need a pan that is highly responsive. However it's even heating and retention of heat makes it perfect for casseroles, roasts, mac-n-cheese, potato dishes, etc. I have been in love with Le Creuset's French ovens for years and use them for chili, stews and other dishes that benefit from long, slow cooking.

I had this item on my Amazon Wish List for quite a while. I could have bought it for myself but it's one of those things that you appreciate more when it is a gift. In France Le Creuset collections are often bequeathed to thankful children from parents that have cooked with them for decades. My oldest son bought this for me from Amazon as a Christmas present. I promised him that he could have it when I was done with it (hopefully a long time from now).

A couple of things to be aware of: at 8" x 11.75" this is smaller than the standard 9"x13" Pyrex dishes that are often used for the recipes that this pan is better suited for. Perhaps it is because Europeans generally serve smaller portion than we do in the US. Another thing to mention is that cast iron tends to be the heaviest cookware available. This roaster can top 13 - 15 lbs. or more when filled with dense food such as potatoes au gratin or a good sized cut of meat.

Yes, this is a relatively expensive product but bear in mind that you never regret having the best (at least not once you have finished paying for it). This roaster is actually a pleasure to clean (and I don't say that lightly). I will have it for the rest of my life and then it will be passed on to my children along with some very warm memories of meals past.
