Sharper than you think,

I have used a series of steel knives all of my "cooking" life which amounts to when I was at college to date i.e. 30 years plus. I had heard about these ceramic knives but was put off by the referrals to damage, chipping and breakage for a number of reasons.My favourite 7" knife would continually get blunted and need sharpening before every usage, admittedly I was using a glass cutting board which as I found out is not a good idea. Had a lovely wooden board given to me so I ordered a ceramic knife to replace my trusty 7" with a new 9". It arrived well within the set time frames and from the outset I have been continually amazed at how sharp it has remained. Against advice I carved ham and turkey off the bone at Cristmas (taking care to not hit the bone!), cut cheese (keeping the knife vertical (so that it did not bend) and slice everything I could get my hands on, including a very thin slither of my thumb which I never noticed until much later. I cannot believe (once again!) how it has retained the sharpness - be warned! The performance of this tool is absolutely brilliant, no more slipping around with tomatoes or onions it is a pleasure to slice carrots but watch out when you cross-cut your sprouts! it will cut any soft material. It cleans beautifully and is a pleasure to use as the handle is considerately designed. I thoroughly recommend this to anyone with second thoughts but if you take the plunge get a wooden or plastic chopping board. 3 months on and it is as sharp as the day I received it and I am now considering investing in a complete set. Well worth the money.

This knife is great. Extremely sharp, and hasn't needed re sharped yet after 6 months of use. Totally recommend it.

This has been a revalation, all my other knives have been left untouched since I was bought the ceramic blade, an all round great tool.
