Simply the best slicing knife I've ever had. It is much lighter than a steel knife, but also incredibly sharp. When I've had it a few months, I'll revisit this review, but if it's all it promises to be, it should stay sharp for a long time. This really does slice those overripe tomatoes that can be so difficult to slice without the knife slipping on the tomato skin. This just goes straight through and makes it simple to cut thin, even slices effortlessly. Fantastic. I suspect that just one of these will be enough to complement my set of steel knives, but I didn't find it any more expensive than, say, a Global. I do hope it keeps that edge too.

Four months on and my first impression has not changed. This is still a fabulous slicing knife. I use it every day for fruit, vegetables or raw meat. It is still as sharp as when I bought it (as far as I can tell). If Koopar had a problem, he should have returned the knives. One of the reasons I use Amazon so much is that they operate a no quibble returns policy. I wouldn't do it deliberately, but I have dropped my knife on my stone floor and have even found myself tapping the back of the blade on the edge of a cast iron pan to drop pieces stuck to the blade. I still don't have any chips anywhere on the blade and am now confident that I won't.

Nine months on and I am still pleased, but the blade acquired a small chip a month or so ago and is losing its sharpness generally. I have bought a diamond Kyocera grinder and it sharpened up really well. The purchase was worth it as I now have two other Kyocera knives and hope they will last for years. The grinder is easy to use, sharpened the orginal knife very well and in the process completely smoothed out the chip. Tip: For best results, read the instructions for the sharpener and take your time using it.

We bought one of these in Yokohama 6 years ago. It just snapped this week, due to bad handling.
It was still the sharpest knife we had, despite being used every day.
So remember not to attack really hard things, and don't bend it too far.
I really don't understand why it's taken so long for them to be available in the UK.
kyocera now market a sharpener too, so the knife should last ages used carefully.

Incredibly sharp and easy to use, it makes cutting anything like vegetables or raw meat and fish a pleasure. It is possible to cut extremely thin slices with minimal effort and very basic culinary skills. Highly recommended.

I was so impressed with this knife I thought I would produce a video review to show just how good it is. A sharp knife makes cooking so much easier and this is a seriously good knife.
Mostly I use sabatier knives so this ceramic knife is being compared to some of the best steel knives, although in the video I compare it to a Kitchen Devil.

Bought this product after reading positive reviews. It was very sharp knife indeed but not worth for the price. Three months later 1 cm chip came of from middle of the knife blade. very fragile.

well ive had this knife for a while, and i use it regularly for cutting everything from tomato's to crusty bread.

you do notice small chips appearing along the blade but for a ceramic knife this is normal, no knife will stay sharp forever. and ceramics tend to have micro chips dulling the knife over time as opposed to a steel knife blade mushrooming over. but even with the few almost microscopic chips the knife is still crazy sharp. as long as i dont abuse it id expect this knife to be sharp enough for any kitchen task for years.

This is my first ceramic knife. If you are cutting veggies this knife makes it a pleasure. Its so sharp it feels like its just going through air and the veggies just fall into slices. Its easy to clean too and just running water over it removes everything. Very happy with it.

I really wanted to like these new ceramic knives but I just don't think they're all they're cracked up to be.

I gave one a go recently and although it was sharp it only really showed its sharpness on less dense salad ingredients like celery, spring onions and lettuce. As soon as I tried chopping a carrot with it it left me disappointed. Maybe I've been spoilt by having Globals at my disposal but between the lack of super-sharpness, which you do get from a Global, Wusthof, etc, the extreme care you have to take not to drop or chip it in any way, and the cheap plastic handle (inexcusable on any mid range knife) I'd definitely rather save up a bit longer and get another Global or Wusthof to add to the collection. Or keep saving for a long time and get a Shun.

They do seem to be generally well received but I don't really get why. I wouldn't recommend the range and see it more as a gimmick than a step forward. Stick with steel and avoid the potential issues you get with ceramic
