Very sharp, well made piece of kit. only problem is that it is a bit more restricted than a normal knife (certain things should not be cut with this knife and you need to be a bit more careful not to drop it) and it must be used on certain surfaces (no metal or granite chopping boards). good shape for veg and meats, wide blade with very shape edge but very thin compared to a metal knife. good knife but care is needed to keep it in top condition.

would have been nice to have a blade guard included.

one star taken off for no guard and amount of care needed.

Exceptionally sharp - much better than steel - and so far has kept edge. About the same price as a decent steel knife. All my chums who have tried it want one. But be careful; it is very brittle. Do not: drop; cut on stone or glass; cut anything frozen or with bones; or use to prise anything apart.

Very very sharp on arrival. Does dull down a bit after a bit of use even being careful to only use it as instructed. I use if for fruit, veg, fish, etc. and use a bamboo chopping board. It's still sharper than any other knife I own however. Excellent for anything with a skin - tomatoes, fruit, fish, fantastic for slicing boneless meat. I've been used to using a big heavy Chinese cleaver style knife so this felt too lightweight and fragile at first but now I've gotten used to it, its a fave. Wish it had come with a blade guard as I think I'll have to buy a cover to protect it.

I've been using this knife for about 15 months now as a real all-rounder (as a santoku, as intended) every single day and I am very much pleased with the durability. It clearly loses "factory state" perfect performance rather quickly over the first couple of months which you can feel, but then keeps a high standard - mine has never been re-sharpened and still doesn't need one to perform. This Kyocera hardened ceramic blade is amazing value for the money. The chipping I observe is no concern at all, part of the normal wear. Not prone to breaking - I dropped mine a couple of times. About the same money as a diamond sharpener, this is how cheap it is.

For those who are not yet familiar with ceramic blades, I suggest doing some basic research. Ceramic is much harder a material than steel hence the much better cutting performance and durability - it's not actually sharper, that's inaccurate to say. You won't have to worry about cutting bread, which wears steel blades out. For cutting vegetables, ceramic will blow you away. Meat is possibly where you will find the least difference. Don't use with bone-in meat. A ceramic santoku should be your primary kitchen knife for all but the special tasks like boning.

I have owned this little gem for almost 2 years and was recently given the sharpener
by a japanese friend. I had mentioned that it was not quite as sharp as it had been originally and that probably resulted from using it to cut and chop on a granite worktop. Follow the instructions - which I failed to do - and you wont be disappointed!
But I must say that this is far and away the best vegetable knife I have ever used and now that it has been resharpened it slices and cuts its way through just about anything. I used it last week to gut and clean some fresh fish - it has never been so easy. Well worth the initial high price.

Glides through meat, veg and fruit. Looks as good as it cuts. Watch those fingers! You must treat this beauty with care: don't cut on glass or granite, don't cut frozen foods, bones etc. as it's as brittle as a teacup.

Just want to say,I own 3 Kyocera knives and two of them droped on the tiles-no damage at all.That is why You pay more for this knives.They are a lot,ot better than other ceramic blades

I bought this knife because I needed something to make shredding citrus for marmalade easier. I cannot be more delighted with my purchase. I chose this particular ceramic knife, because unlike a lot of others the blade is wider than the handle which makes chopping easier. A lot of the other ceramic knives I saw you could only use them on the edge of your chopping board as the handle (being wider the the blade) got in the way and you would be unable to chop all the way through things. This is a lovely knife and I could not have chosen better for my first foray into the world of ceramic knives.
