Four and twenty blackbirds,
Baked in a pie.
When the pie was opened,
The birds began to sing;
Wasn't that a dainty dish,
To set before the king?
This little (10 cm) ceramic pie bird looks so pretty and it is such a great idea for a gift; I bought one for myself and one for a friend who loves to bake pies.
The way it works is very simple; it is placed inside the center of the pie, before baking and it works as a steam vent and also keeps the top pastry crust in place, preventing it from sagging in the middle. So, not only does the shape of the pie look great, but also an adorable little blackbird peeps through the crust, as if ready to sing. Also, this lovely bird is dishwasher safe, it has a 12 months guarantee, and the box includes excellent instructions in English and in other languages.
This excellent kitchen gadget is not a new invention, its history goes back to the 16th century and it was widely used in Victorian times. I love using old fashion 'historical' household items, especially when they work so well, and this bird is one of my favorites.

Despite the fact that my husband found it hilarious I should buy such a thing as a pie funnel (never mind one that looked like a blackbird) I have been proved right! Every time I did a home made pie they always sank in the middle which then left either the filling overcooked or the pastry overcooked so I thought I'd try one of these. Glad to say that although it might seem a bit naff, they are brilliant and they actually work. The funnel sits in the centre of the bottom of a pie dish, the filling goes around it and the pastry on top with a small hole cut out for the blackbird's head to pop through. I think the gist is that the hole in the funnel allows steam out to prevent the pastry becoming soggy which gives a crusty pastry lid. They are a bit awkward to clean but well worth it.
