As a cutting board the surface will very quickly show many surface cuts, possibly after the very first use, if your knives are sufficiently sharp as the surface is a soft plastic. Once the cuts are deep and ingrained, bacteria can collect and could be a potential health risk. This version is an unpleasant lime green but a few other colours are available. I bought this primarily for vegetable preparation and a red version for meat.
Once you have finished chopping, the board can be folded and locked together to ensure that your chopped food is transferred from the board into the pan. A simple concept but is less good in practice as the board does not seem to want ever to fold in quite the correct way such that the parts lock together as intended. Only rarely did the folds occur in the correct order.
As with many Joseph Joseph products, the concept appears brilliant and simple but many do not work quite as well as they should. Having disposed of one or two others in the past for that reason, I do not now believe that I thought that this would work any better.
I still believe that a good one-piece (not glued) wooden board is still the best if properly cared for and cleaned.
