The well-publised health benefits of dark chocolate have given many chocolate lovers an added reason to indulge in recent years. Sales have doubled in the past five years and are worth £85 million a year in Britain alone. Conveniently forgotten, however, is the fact that a bar of dark chocolate still contains high volumes of fat and sugar. So how do you enjoy the health benefits of cocoa without the worry of an expanding waistline? Raw food expert and nutritionist Jessica Fenton says the answer lies in the anadulterated beans of the cacao pod. This, she says, is the real superfood, and it is quite different from its foil-wrapped relative. Cacao pods, which grow on trees, originated in Central and South America. Ancient South American civilisations prized them so much for their medicinal and aphrodisiacal properties, they even used them as currency. "The modern manufacturing process for chocolate bars involves firstly harvesting the pods, which contain seeds known as cocoa beans,' explains Fenton. 'The pods are crushed and the beans and surrounding pulp extracted, fermented, then dried - either naturally by the sun or mechanically in a factory. 'The dried beans are then roasted, in a similar way to coffee beans. The length of roasting depends on the type and size of the beans, to form cocoa, which is mixed with sugar and fats to form chocolate. Raw cocoa beans, on the other hand, are fermented and dried but not roasted, which preserves their antioxidant content.' Dr Sarah Schenker, a registered dietician from the Nutrition Society, saysL 'The lower levels of antioxidants in dark chocolate result from the effect of high heat during roasting. This process removes micronutrients that often have antioxidant properties and other health benefits.' Antioxidants - found in all fruit, vegetables, herbs and seeds in varying levels - are important because they neutralise molecules called free radicals. Free radicals are generated by external factors such as sun exposure, pollution and cigarette smoke but are also produced by the body during various metabolic processes, or in response to infection to kill viruses. These molecules can damage healthy body tissue, and antioxidants neutralise them. Studies have shown antioxidants consumed in the diet can help protect against everything from heart disease to cancers. Raw cacao powder has nearly four times the antioxidant content of regular dark chocolate, 20 times more than blueberries and 119 times more than bananas. And cacao does more than boost antioxidant levels - studies have shown that if contains a third more essential nutrients than traditional roasted cacao. Cacao contains protein, calcium, carotene, thiamine, riboflavin, magnesium and sulphur. It is a source of phenethylamine (PEA) a naturally occurring chemical released by our brains in large quantities when we are in love. A study carried out by the Univerisity of Maryland showed that PEA is beneficial for depression. It also contains anandamide, a compound that causes feelings of relaxation and satisfaction. Raw chocolate can be bought in powder or nibs - tiny chunks of the crushed, dried beans. Hotel Chocolat offers a range of nibs coated in regular dark chocolate. I received my copy of Jessica's Raw Chocolate Recipes and instantly fell in love the moment I took it from it's packaging. For the very affordable price of £6-something I was not expecting such high quality, it is a very beautiful book indeed. The hard back cover for example is different from most others (no paper outer cover that gets torn and so very often ends up looking a mess). The photography is stunning including images of the recipes, ingredients, author and equipment. The layout is easy to read and of a very high standard and would make a brilliant gift for a chocolate loving friend / relative.

I found the book helpful having a photograph of every recipe for me to refer to. The recipes look mouthwatering and I like that there are healthier versions of all my previous junk food favorites including banana split and chocolate bars. I'm also new to raw chocolate and found the information pages on what ingredients to buy and equipment to use very helpful, along with the difficulty rating. I don't have a powerful blender but have coped very well so far without by using a food processor and regular blender.

I have already make 8 or 9 recipes from this book and still remained shocked that this food is not uber unhealthy, as the recipes taste phenomenal. I've even got my sister hooked and she's a junk chocolate lover. This alone was worth getting the book for and I've just ordered a copy for her which I know will make her day. With this book and the right ingredients in the cupboard I'll never need roasted chocolate ever again to cure my chocolate cravings. I'm feeling very grateful to have found it. The fact that I've also lost over half a stone without even trying has encouraged me to experiment more so with raw foods to reach my goal weight.

This beautiful book really radiates joy and inspiration! Not only is it very pretty to look at throughout (each recipe is accompanied by a lovely photo), but it is just bursting with wonderful recipes that will definitely make you want to get 'uncooking'. There is something gorgeous to make for every occasion. I have tried several of the recipes myself, and have found them to be most successful - not to mention completely, mouth-wateringly delicious! There are many other useful sections in this book too, for example, a detailed guide to the ingredients used within the book. The author's positive energy seems to simply shine through on every page! This book would definitely make a beautiful gift - it's just lovely!

I bought this book as soon as it was published and have recently bought another for my cousin, who is visiting from New Zealand, as I thought she was going to disappear with my copy!! She also loved it and wanted to take it to introduce her friends to it, so hopefully it will do well there too. The recipes are mostly quite easy to follow and the more tricky ones are certainly worth it. My end results have been amazing and friends have commented very positively when they have tried my efforts.

I think that Joy McMillan's review is a very unfair review, for what is a fantastic book. Some of her statements are also incorrect - I've scoured Jessica's Raw Chocolate Recipes for mention of a 'dehumidifier' as Joy McMillan mentions in her review and I can confirm that there is absolutely no mention of this in the book. The equipment needed is pretty standard and anything more unusual has an alternative. This book has been invaluable in helping me to enjoy tasty, healthy sweet foods, so please don't let it put you off enjoying the delicious, very tasty recipes inside. I've recommended this book to many of my friends and family, all of whom have given it excellent feedback.

a little bit of what you like...
I've only just started to use the book, but so far, mmmm. Nicely put together, easy to use and nice pictures. If you like chocolate, but not dentists, worth a read.
