I recently got my hands on Irresistible Ice Pops , by Sunil Vijayakar, published by Parragon Books. Due to the lack of tropical English summer weather (up until now) I haven't felt that ice-lollies have been at the top of my to-cook list, so have left this amongst my pile of ever growing books (not) for a rainy day. Now that the sun is shining, it's a whole new ball-game. I am ready to conquer the ice-lolly making extravaganza and share my experience with you all. This book is fab, and really does make you think why do I bother buying pre-made ice-lollies? The photography is brilliant, there's at least one photo for every single recipe (very important, in my eyes), and the instructions are super easy to follow. What's more, there's a vast variety of ice lolly recipes from fruity to chocolatey, to indulgent adult-only versions that are sure to get your taste buds tingling. What this author also does brilliantly, is think creatively in terms of what you can make an ice-lolly in. From muffin trays to coffee cups, plastic glasses to yogurt pots, down to your classic ice-lolly mould anything goes. Don't have any lollipop sticks? How about using lemongrass, or a stick of cinnamon? Ingenious. So far, I've tried two recipes from the book and conjured up a further one of my own. They've all worked fabulously and provided a brilliant refreshment on a hot summer's day. My favourite: the lime and chilli lollies, a complete explosion of my favourite flavours, satisfaction guaranteed. I opted for shot glasses and coffee cups for my moulds, which worked brilliantly. If you can get your hands on sugar syrup in a bottle, use it - if not, you can make your own.
