Product Description

Product Description

This is a modern collection of recipes based in the rich culinary tradition of the sub-continent. Tastes and styles of cooking are drawn from all parts of India - from the rich, meat-based Moghul food of the North to the vegetarian curries of Goa and Kerala and the aromatic fish dishes of Calcutta. The author provides a hands-on guide to cooking superb, authentic Indian food at home. His recipes contain imaginative flavour combinations, with an emphasis on the use of fresh ingredients, carefully balanced spices and simple culinary techniques. --This text refers to an out of print or unavailable edition of this title.

5.0 out of 5 stars Really quite good, actually, 21 Feb 2005
There is a bit of everything in this book. From lovely vegetarian starters such as rajma ki tikki (red kidney bean cutlets) to subtly flavoured meat dishes such as black-pepper chicken curry. Or, do you fancy some dim-sum Indian style?
This book illustrates the diversity of food from the sub-continent region to encompass lovely seafood, vegetarian & meat dishes as well as ubiquitous "super-sweet" desserts.
It also destroys the myth of Indian food having to be high in fat & salt.
As a foodie with many, many (far too many!) books this is, by far, one of my most thumbed.

The recipies shown , are really good , Mr kochhar is a michelin star chef , and was recently on the tv programme "cooking for the Queen" I`m slowly working my way through the book trying out all the different recipies , i really cant reccomened his Tandoori chicken enough ,
My only concern is this is exactly the same book right down to the page numbers , as his Simple Indian book .which i also have .

5.0 out of 5 stars Buy direct from the restaurant BENARES, 3 Jan 2008

This book is very good. I recently purchased mine in October 2007 direct from Atul Kochar's restaurant "Benares" and they posted it out to me. It was also signed, which is where the "joker" from used and new probably got his, yet he is trying to sell his for £450 instead of £18.99 !!
