I've owned this and several other I O Shen knives for 7 months now, I'm best described as an enthusiastic amateur and use them in my home kitchen every day. The blade is simply superb, and maintains it's edge for a ridiculously long time. The only criticism I can level at these knives is that several professionals in various testimonials have stated that the handles are comfortable and the knives are well balanced.....Well I can broadly agree on the balance, but, I find the handles rather too chunky, square, perhaps even a little "coarse" in their overall profile and consequently whilst I don't find them uncomfortable (though a slighter person might) the handle's "presence" is a little too obvious for my liking and it's for this reason alone that I award these knives a 4 star rating out of 5, a straightforward streamlining of the handle design would cause me to award 5 stars without hesitation.
