Product Description

Product Description

More and more Americans are being diagnosed with diabetes than ever before, and many others are realizing that they have a genetic predisposition (or lifestyle) that is likely to lead to diabetes, But what to do about the inevitable craving for dessert? We all have it, but diabetics have long been left without a satisfying, healthful way to enjoy a sweet treat after a meal. Jean C. Wade, a diabetic herself, has created a cookbook that is chock-full of welcome answers to the dilemma that plagues diabetics and dieters alike: how do you make delectable desserts without using sugar, honey, corn syrup, or molasses—all those highly caloric sweeteners that make blood sugar take off like a rocket? By carefully testing and experimenting with different sweeteners on the market, and often using fresh, ripe fruits and juices, Jean has come up with nearly 100 recipes that avoid the pitfalls to baking without sugar.

I do read a lot of healthy cookery books and particularly those written for diabetics and I have to say that the recipes in this book are not at all like the ones I use. I understand there will be a difference in ingredients, language and measurements as it is an american book but how can you offer a choice of "low fat milk or whole fat milk" in a recipe. You never use whole fat milk in diabetic cooking. Also the author seems to be rather fond of using heavy cream in a lot of the recipes too. And using fructose in place of sugar is not the answer to healthy sweetening in diabetic puddings. I have learned to use natural sweetening such as fruits or small amounts of sugar and most recipes can be adapted to a healthier version. Jean Wades recipes were quite time consuming not simple, not quick desserts either which is expected for a family book to cater for everyones taste including the diabetic. The photo of the author on the back page was no advert for a healthy diabetic. Very disappointing so I returned it to Amazon. If you want some good diabetic cookery books look for anything written by Azmina Govindji.

Not as great as the reviews say 22 Feb 2006
By Molly May - Published on Amazon.com
Format:Paperback
I just wanted to lend another perspective to the reviews written here for this book because I bought this book based on those reviews and was very disappointed. The majority of the recipes call for sugar substitutes such as Sugar Twin or Equal, which is okay, but I was expecting more recipes involving natural sweeteners, like juices. A lot of the recipes are not really recipes - for example, fruit jam roll-ups are simply refrigerated crescent rolls with no-sugar jam and nuts - wow, I needed a recipe book for that? Also, the recipe instructions are annoyingly vague - I can make up my own recipe and estimate and correct for, but when I purchase a cookbook, I expect exact and detailed measurements and instructions. Overall, it certainly isn't a 5-star book, and I just wanted to write this review so other people thinking of buying this book would not be disappointed when they got it and tried the recipes. I wish I would have looked for a Splenda cookbook instead.

No sugar - but lots of white flour 11 May 2006
By Sarah B. - Published on Amazon.com
Format:Paperback|Amazon Verified Purchase
I was disappointed that most of these recipes still use refined white flour or cake flour. These refined carbohydrates can spike blood sugar too, just like sugar does. Probably the only recipes I'll be able to use are the ones for custards, etc.

The best desserts I have ever tasted! 25 April 2000
By Bernadette Tyrrell - Published on Amazon.com
Format:Paperback
I can not believe how wonderful these desserts taste. It is incredible that no artifical sweetners were added. Not only are these receipes good for our health but, they are low in fat. That is a big plus considering we are always watching our weight. Definitely 5 star all the way!
