More About the Author

Lorraine Pascale first found fame at 16 as a super-model, but felt that food was her first love and decided to train as a chef.

On completing the Leith's Diploma of Food and Wine, Lorraine did a two year foundation degree in International Culinary Arts in Pastry and then worked in some of the most renowned kitchens of the world, including Petrus, The Mandarin Oriental, Gilgamesh and The Wolseley.

She now owns and runs Ella's Bakehouse cupcakery in Covent Garden, the favoured bakery for the rich and famous. Her client list includes Madonna and Marco Pierre White and her celebration cakes are now available in Selfridges.

Having purchased Lorraine Pascal's previous book Baking Made Easy I was keen to try this one. This is even better thanks to the inclusion of more pictures.

The recipes are inventive and varied, it is lovely to try different flavours without having to give up because the ingredients aren't readily available. The book follows the logical order of:
Starters,Soups,Canapes & Snacks
Breads
Mains
Vegetables & Vegetarian
Deserts
Cakes & Cookies
Sweets, Jams & Other Good Stuff
all with pictures and full fool-proof instructions. I have already tried the Bacon & Mature Chedder Cheese twisties along with the Paprika baked sweet potato wedges with honey-glazed bacon & herby creme fraiche. Both were absolutely delicious and disappeared extremely quickly. There are many recipes that appeal to me so I'm sure this book will be as well used and enjoyed as her previous one.

I just received my book in the mail today and have to say how much I enjoy Lorraine's recipes! I'm writing from Canada and discovered Lorraine on YouTube, as I don't think her programmes run here, but even if they did, I don't have satellite or cable anyway, not much on television worth watching these day! There are so many of Lorraine's recipes I've already tried and adore! She has made me unafraid to make breads and pastry and now I can discover so many more recipes that are items we don't usually make in Canada, the more classically British ones! I've gone out and purchased an electronic scale to make following her recipes easier and stress free, as we cook/bake more from volume than weight in North America and it's making everything a breeze!! I highly recommend this book for anyone who enjoys cooking and doesn't feel the need to be a rocket scientist too as all the recipes are made super easy to follow. There are loads of recipes that are vegetarian too!!!!!

I'm a bit of a recipe book freak and have so many, I'm also guilty of ripping recipes from magazines and newspapers and putting them into a file. Of course, some of the books lay unread and unused after the initial flick through the tempting pages. Not this one!
I first came across Lorraine Pascale's recipes in Good Housekeeping magazine and tried a couple of them over that weekend. Total and utter success - easy to follow, simple but damn good food. I then went out and bought the book and I've been delighted by every recipe that I've tried so far.
So often, these books have a couple of tempting recipes then loads of pages of things that I'd never cook. This book is very different, I want to cook everything!
Fabulous illustrations too. A winner in my kitchen!

Generally I love amost of the recipes I have tried in Lorraine's book. It's great to have been inspired by many recipes and her natural enthusiasm (sometimes I have been inspired to the point of obsession!)
With Christmas coming, I've been impressed with a few turn outs that an pass off as special presents, presented in jars etc- the marshmallow fudge (foolproof) is a must!!
However, why I feel I cannot honour it 5/5, the book has frustrated me from time to time with some of the vague instructions- one example comes to mind, "bake until smell cooked," which isn't exactly useful, alongside an approx cooking time.
Hopefully my feedback will help perfect Lorraine's future books, which I still look forward to buying!

I haven't cooked much from this book yet - the recipes I have done have been fine, BUT I'm not sure whether an editor has been anywhere near this book. One recipe calls for the oven to be preheated, but it's never actually used in the recipe. Another asks you to fry some potatoes and set them aside, but they are never added to the final dish. And those are just the ones I've noticed so far. Perhaps watching the series was essential to understanding the book. I don't doubt the ability of the chef, but the book is not brilliantly put-together, meaning you have to guess a few of the steps. Personally, as a disliker-of-pears, I find there are far too many recipes which contain pears.

After trying some of the recipes I had seen on the tv programme (chocolate mousse, mascarpone gnocchi, and so on) I decided to buy Pascale's books: this one, Lorraine Pascale's Fast, Fresh and Easy Food and Baking Made Easy. I found all three books really inviting and I can't wait to try some more recipes.
Each recipe is presented with a wonderful picture and a brief introduction. The recipe itself is explained in a very clear and straightforward way.
There are 100 recipes divided into 7 sections:

- Starters, soups, canapés and snacks
- Breads
- Mains
- Vegetables and vegetarian
- Desserts
- Cakes and cookies
- Sweets, jams and other good stuff

The first recipes I want to try are:

Danish pastries
Beer-battered fish & baked chunky chips
Warm & cosy coq au vin
Sweet potato & salmon fish cakes with chives & lime
Heart-warming boeuf bourguignon
Prawn bisque with basil & brandy
Twice-cooked chicken Kiev

Sadly the desserts and cakes recipes were not incredibly inviting.
