Oi Cheepchaiissara was born in Thailand and took her degree in Bangkok at the Poh-Chang College of Arts. Now living in England, she runs her food manufacturing business, teaches Thai cooking and is the author of Hamlyn's Fresh Thai.

Have tried several of the recipes - all are delicious. Instructions are easy to follow and clearly set out. The book gives recipes for making various curry pastes from scratch. Unusual ingredients are described and alternatives given. Recommend this book highly.

This is a really good recipe book, there is a great variety of recipes including various soups and starters as well as main meals and also gives a list of equipment and ingredients which are used most commonly in thai cooking. I've also found the recipes for thai green/red curry paste very handy as they are used as a base for many other dishes.
(ps it tells you to turn to page 200 for the green curry paste but it's actually 202)
